Protons and neutrons are composite particles made up of quarks, which are believed to be fundamental. Electrons are believed to be fundamental.
Edit--I wouldn't say electrons are leptons exactly--they are just one kind of lepton. Both leptons and quarks (and protons and neutrons)have spin-1/2, so they are fermions.

Protons and neutrons are baryons, and are each composed of 3 quarks.
Protons are composed of 2 "up" quarks and 1 "down" quark, neutrons of 1 "up" quark and 2 "down" quarks. The names are purely arbitrary.
Electrons belong to a class of particles called "leptons", we define an electron as a negative charge, which balances a protons positive charge. Neutrons exhibit no charge, they are neutral.

In the Standard Model of physics, an electron is a lepton, and an elementary particle, and protons and neutrons are made up out of quarks. In String Theory, those elementary particles are made up in their turn out of vibrating "strings".

They are made up of quarks...which come in flavors....but no one knows what the quarks are made of....indeed...no one knows what any of the particles are made of. In my unscientific opinion, the particles are made of the fifth force, as yet undiscovered........
