you can check out the Wild Animal Park over east of Escondido, like the Zoo except bigger and the animals roam freely. But check the weather before you go b/c it can be very hot our there during the day compared to what it is near the coast in La Jolla.
YOu still have time to check out the SD County Fair I believe, I think the 4th or 5th is the last day so if you want to go do it before then. The Padre's will be in town for the last few days of your trips so you can catch a game downtown too.
Pacific and Mission Beach are great beach communities to visit but it's going to be really crowded and full of young people partying that week, so that may or may not be something you want to do. Also renting a jet ski or boat and taking it out on Mission Bay is always a fun activity.
Since you are in La Jolla check out Windansea Beach at the end of Natilus St just west of La Jolla Blvd or/and the Marine St beach just north of Windansea. These are my favorite beaches in SD and are not very touristy or too crowded. Also other great beaches north of LJ are Torrey Pines State Park, great place to hike up the coastal bluffs too. And Del Mar and Solana Beach have nice beaches within walking distances of their downtowns.

At Balboa Park they've got a temporary show of the Dead Sea scrolls which is a BIG DEAL but I'm not sure if they might be sold out for the dates you're considering; better contact the Natural History Museum to check it out. For a Great view and a nice little hike go to Point Loma and visit the Cabrillo National Monument. Drive down the hill and you can visit the tide pools at the same location.
Old Town is good for an afternoon,
Have you been to Coronado and the Hotel Del ?
Don't go to Tijuana Unless you know how long the wait is to get back across the border.

for people who've a Christmas easy custom i think it rather is putting them up after Thanksgiving and down or a minimum of off after the hot year (on each occasion your new year starts to your loved ones's ethnicity). I even have heard it relatively is frowned upon to maintain them up all year, love it relatively is a white trailer trash element to do or something. i do no longer relatively care approximately that. the only lighting fixtures we've up are Christmas lighting fixtures around our terrace and that they seem purdy interior the night after a bbq! happy Hump Day! :)

You absolutley have to go to the Del Mar fair. THey have rides and attractions food every type horse races pig races game booths fun houses shops horses and cows and pigs to pet aquariums its fun for the whole family!!!
