I've been to a couple RAW shows and Smackdown tapings. Sometimes they set up the ring for the next match or they'll have the girl with the t-shirt gun during commercial time.

Haven't been to a WWE event but the WCW shows I went to they didn't do much.

Im pretty sure that they dont do anything. that is like the time that the audience can go to the bathroom, get up and stretch, and go buy snacks or signs or whatever! :D

the match goes on but all the boring parts happen and the stuff they dont want us to see on tv
