Can anyone Please help give me some ideas (hopefully organic) that can help cut down on the amount of grasshoppers eating my garden before we can??

NoLo bait spread outside your garden as well as inside. It is safe but works better on smaller grasshopper nymphs than the more mature instars.

Since grasshoppers are migratory, killing them in the garden doesn't stop others from moving in.

Ideally you should plow around the outside of your garden (read your neighbor's property) in winter to expose the eggs to freezing. Since that's not possible (darn it) NoLo bait is about it. It's a spore than kills grasshoppers.

Other option is fowl......a couple of chickens, turkey, goose, duck, etc would munch them right up.........and dig up your garden. Banty fowl, the small birds are actually kinder to gardens.
