Sorry need more info, if they do not live there yet how do you know they are bigots? Doesn't that make you a bigot for placing them into a class before you meet them ? Or are they not like yourself from what you seen from afar?
Then again you might be right. Don't know what you should bake maybe you should have neighborhood meeting instead. If the people stand as a whole then theres a chance that person can not move there but would be hard to prove your point with out seeming like a bigot yourself.

Some gingerbread guys and girls would be good. Icing them in all different skin tones and pipe on icing leather jackets and stuff. Of course you could always make a Boston Cream pie. Of course little rainbow colored sugar cookies would be cool. Make a cake with thin layers and use food coloring in the batter then put them together so that when sliced it makes a rainbow colored flag.

Male linked with male symbol cookies, same with female linked with female cookies... then frost them and put rainbow sprinkles on them... Or even just triangle shaped cookies with pink frosting or frost square cookies with the rainbow flag on them. :)
When's the bake sale? I like excuses to help good causes that let me eat. :D

Well, that depends. If you're selling TO the bigots, maybe a nice German chocolate 2-layer with lots of laxative in it. That might help them be less full of s**t...
