apparently its becuase Matt Groening thought it would be funny when it first aired if people thought their tvs were playing up and tried to adjust the colour.
Cant remember much of the details but that was the general reason why.....
As for fingers, they probs just found it easier to fit four on a hand than five.

If you looked at the color cartoons Matt Goering made before the Simpson's, then you would find that was his chosen color for white people.
