i put all the cash not given to the bank (i.e jail money, income tax, etc.) + 500 bucks in the middle of the board and it all goes to the person who lands on free parking. we repeat this throughout the game everytime someone lands on free parking.

I highly advise against the so-called "Free Parking" variant. All it does it drag the game out longer by giving away lottery prizes to lucky winners.

The best variant that I know of: Auctions.

Each time a player lands on an unowned property, instead of that player buying the property at the printed price or it remaining unsold, it goes up for auction amongst all the players. The prices printed on the board space become meaningless. The minimum bid to enter the auction is the mortgage value of the property. Starting with the player that landed on the space, go around the table placing bids. If you "pass", then you are out of the auction. Keep going until all but one player has passed. Highest bidder purchases the property for the amount bid. Sometimes you get a bargain, sometimes you pay a premium price to get that important property that you want badly. It adds a layer of strategy to the game.

You always pay when you land on someone's property whether they caught you or not. No building on properties until all are sold. When the last one is sold, the dice pass to the player who is to go next and they start the trading. When everyone is finished trading, the game resumes. If you are just shy of enough money to pay someone off, you can wait to go around to GO. Then, you must pay them off completely. You can't owe 2 people and you must pay off the first person you owed money to and then the second person. (If you owe someone and then land on another before you get around Go.) We sometimes use the time limit. (I'm a mom of 5 and have used this game to hone my kids math and money skills. I always made them count money back the "old fashioned" way. This has helped 2 of them get a job! All my kids are now graduated from High School.)

All the other variations make the game too long and tedious.
