Why can't we just write like we talk?

No one would be able to understand it but those who have the argot (slang) of your subgroup. Without proper punctuation, who would know where a sentence ended, or if a clause is dependent or not? Spelling is important if you want to make sure a foreigner can recognize the word, or someone who would like to look up the meaning of it.
If you make your own rules, okay, but only within your subgroup.

Because we talk with sound and that ads to the understanding of what is meant...like accents and sarcasm.
