This happened on a flight I was on last September. The aircraft was British, the mother was American and Egyptian, the baby gets to be....Canadian. The baby was born somewhere over the Atlantic (which the captain announced over the PA) At that point I think the plane itself was technically in Candian airspace, which is why the baby became a citizen of that country. If the plane had been over international waters I'm not sure what her citizenship would've been though.
Also, contrary to popular rumors, a baby born on a plane doesn't get free flights for life on that airline! At least not on British Airways.

The UN and most countries consider place of birth to be the place where the child first disembarks, but this isn't a universal rule.
But place of birth doesn't have much legal bearing. Citenzenship is the important thing, and rules vary from country to country. Some countries will grant citzenship to a newborn based on country of first disembarkment. Others based on airspace where the birth occured. But it's pretty much universal that the parents' country of citizenship will grant citizenship to their offspring, regardless of place of birth.

This won't happen very often as airlines dont allow pregnant women over 7 months to fly. However if the baby was to be born premature or the pregnancy was hidden well, the destination of the plane would be the baby's birthplace.

I would just say I was born 8 miles high.
Artist/Band: Byrds
Song: Eight Miles High
Eight miles high and when you touch down
You’ll find that it’s stranger than known
Signs in the street that say where you’re going
Are somewhere just being their own
Nowhere is there warmth to be found
Among those afraid of losing their ground
Rain gray town known for it’s sound
In places small faces unbound
Round the squares huddled in storms
Some laughing some just shapeless forms
Sidewalk scenes and black limousines
Some living some standing alone

Your place of birth will be the destination of the airplane or the landing place. Usually the airline company give a lot of benefits to the child, like college plan, etc.

well, it's up to you.you could ask the flight attendant where the plane currently is(above what country),or where you're landing.but to me, it is where the plane took off, because if you weren't on the plane, you would be given birth there!most of the time is actually up to you!:)
