i'm getting bored with what i cook and need new ideas please, recipes for 1 or 2 people and cheap cheap cheap!!!!!!

Fire Dragon Pie!

This is a complete meal in one, sloppy and spicy dish.

Cost from scratch: about £2.65 (veggie option) or about £3.40 with mince
Serves: Two, or you can eat one portion and chill the rest to eat tomorrow!

Ingredients:

Orange lentils (about half a cupful)
2 large spuds
1 can of chopped tomatoes
1 onion
5-6 mushrooms
1-2 carrots
Small tin of kidney beans, drained
2 teaspoons of chilli paste (look for it near the herbs & spices section of your supermarket - a jar's about 80p)
1 pack of mince (beef, pork, lamb - anything you fancy)
Bit of grated cheese

Here's what you do:

Boil some water in a saucepan and put the lentils in. Keep them simmering until they're soft.

Peel the spuds, chop them up into quarters and start boiling them too.

While that's going on, chop up the onion, the mushrooms and the carrot, and gently fry in a little butter or oil until the carrot is soft and the onion goes a nice golden colour.

Add the mince to the pan if you're using it.

Once the mince is cooked (ie it's no longer pink) drain the soft lentils in a seive, and add them to the vegetables and mince. Stir it up, adding the can of chopped toms, 2 teaspoons of chilli paste and the kidney beans. Mix it all up.

Drain the potatoes once they're cooked and mash them up.

Put the veg, lentils, beans and mince in a cooking pot. Spoon the now mashed potatoes on the top and sprinkle a bit of cheese on that.

Put the pot (without its lid on) into an oven at Gas mark 6 or 180°C and bake for about 20 mins - or until the cheese has melted a bit. You could stick some garlic bread in alongside it if you like.


Pasta Spesh!

Cost from scratch: £3.30ish
Serves: 1 big meal or 2 normal sized

Ingredients:


A can of condensed tomato soup
1 packet of sausages
Some pasta
You can add an onion too it you're feeling fancy...

Here's what you do:

Grill the sausages until they're just how you like them. While they're sizzling away...

If you're using them, fry the onions in some butter or oil until they're soft and brown

Cook the pasta in boiling water until it's soft

Empty the tomato soup onto the cooked pasta

Heat it through for a couple of minutes, but don't let it burn!

Snip the sausages with some kitchen scissors into the pasta and mix well

Not everyone likes tuna or beans I know. I hope you do. here are a couple...
Tuna Melts
2 cans tuna
1-2 T. celery- finely chopped
1 T. onion -finely chopped
1t. mustard
1T. dill relish
Mayo what every kind you like and how ever much you prefer (1/4-1/2 cup)
sliced cheese -again what ever you like (we use american)

on toast put a couple of spoon fulls and put under broiler just until the cheese is melty and browned. have a salad or fresh veggies/ fruit. cheap, quick and easy.

I did not want to eat this soup for a long time, it sounded weird (it is) but I actually have it on my stove right now.
It is from weight watchers.
1cans great northern beans (i mix the types of beans)
1 can corn (somethimes I leave it out)
1 can of tomatoes with diced chilies (rotel)
pkg dry taco mix
1/2 pkg dry ranch salad dressing
Big can chicken broth
throw it all in a pot heat and eat.

Make your taco meat (use turkey, in fact i dont usually add the meat to my salad)
all the regular topping
I add pinto beans (no refried for this taco)
I layer everything on a handful (or 2) of doritos
use what ever dressings you like, or stick to salsa
my boys like ranch and I like a litte french.
I truly hope this help or at least give you an idea or two.

Below is a link with menus for a 2 weeks of healthy and less costly meals. Recipes are included for things like pot roast, casseroles, variations of meat loaf (hamburger is relatively cheap and not altogether unhealthy). Enjoy!!!

Costco stir fry veggies about 7 dollars for a HUGE bag
extra firm tofu one dollar
yellow onion, garlic
sriacha chili sauce
soy sauce
green onion, cilantro
sear tofu, add garlic and onion
add veggies and sauces (as much or as little as you want)
cook until tender but not soggy
top with cilantro and green onion

Easy Creamy Pork Tenderloin [6 servings]

1/2 pounds pork tenderloin
ground black pepper to taste
2 (10.75 ounce) cans condensed cream of celery soup

Season pork tenderloin with pepper, and place in slow cooker. Pour undiluted celery soup onto tenderloin, covering meat completely.
Cover, and cook on Low for 8 hours.

Quick and Cheap Pasta

1 tablespoon butter
spaghetti or desired pasta
Sauce:
0 olive oil
1/2 onion, finely chopped
4-5 tablespoons tomato paste
1/2 cup water
salt
pepper
nutmeg
mustard
lemon juice

Have some boiling water, with salt and one of those chicken stock cubes in it and a tablespoon of butter.
When it starts to boil, add the Spaghetti or any other type of pasta.
After about 10-15 minutes, the pasta should be cooked (try it and see if its not hard) Remove the water, stir a little bit with a fork (don't squish it!) and let it dry for about one minute. You can eat the pasta like this it's good, but you'll be fed up with it in no time, so, the solution I found is to add some nice sauce: Start making the sauce about 5 minutes after the pasta's been boiling Have some oil or olive oil on a frying pan or a small pan.
Add half an onion cut into little pieces.
When the onion starts to get transparent and soft add a little bit of concentrated tomato, just about 4-5 table spoons.
Stir (have the fire set to LOW) Add half a cup of water and stir again.
Add salt, pepper, nutmeg, mustard, lemon juice, and any sort of seasoning you like, and let it cook for a couple of minutes.
And there, you have your basic sauce recipe, if you're vegan, just pour it over the pasta, it's very tasty.
If you're not vegan you'll soon get fed up with this to, to solve that problem, simply add whatever you want to the sauce, it's excellent with canned tuna, mushrooms, fish leftovers, meat, ham, really ANYTHING you like! And the great thing is that the sauce has a completely different taste depending on what you add to it. I hope this helps :)

Fast and Easy Tofu Lo-Mein [4 servings]

1 (16 ounce) package extra firm tofu
2 tablespoons olive oil
2 (3 ounce) packages Oriental flavored ramen noodles
1 (16 ounce) package frozen stir-fry vegetables
1 1/2 cups water
1 tablespoon soy sauce, or to taste

Press tofu between paper towels to remove some of the water; cut in to bite size cubes. Heat olive oil in large skillet over medium-high heat. Add tofu, and fry until golden brown, about 15 minutes. Stir occasionally to prevent burning.
Meanwhile bring water to a boil in a medium saucepan. Add noodles from ramen packages, reserving the seasoning envelopes. Boil for about 2 minutes, just until the noodles break apart. Drain.
Add the stir-fry vegetables to the pan with the tofu, and season with the ramen noodle seasoning packet. Cook, stirring occasionally until vegetables are tender, but not mushy. Add noodles, and stir to blend. Season with soy sauce to taste and serve.

Pasta... with anything! I'm a student which means I have to live on a budget and I eat it everyday which leaves me with loads of money for more important stuff.... like wine!
