Formal dinner or banquet? You don't need a grease monkey to repair a car either. I think what your talking about is types of food how long before service and courses thru the formal dinner.In food service timing is everything having people help with the delevery when food is readied prepped and at the table and having the side boards set up properly for wine and coffee to serve at the right times.. You will just to experment on friends.
