You can fry the wings in oil instead of butter. You still need the butter for making the hot sauce.

You can always replace butter with olive oil. If you are worried about the flavor opt for Extra Light Olive Oil instead of Extra Virgin. Extra Virgin is a cleaner oil, but Extra Light has the ligther flavor and it will blend in with other flavors and not change the taste like EVOO can.

I would think it wouldn't mix well. You can try a butter substitute if you are trying to make your wings more healthy. You also don't have to make the hot sauce. Try ground garlic and parmesian cheese or ground garlic and lemon pepper. Both of these combos is actually quite excellent on your wings.

you could make a rub of your favorite seasonings like garlic, salt, pepper, and chili powder. Then get a spray bottle and spray olive oil or canola oil on it. Spray wings before going in 375 to 400 oven and cook until they are golden.

Yes, I never use butter for chicken wings. I use light extra virgin olive oil. Don't use the regular one as it is heavier in taste and consistency.
