Well,
It depends on the age of the students, if they are Minors, (under 18). You can get into some serious problems.
If they are over 18 they are considered Adults, so nothing can be done.

No.
When I was an insurance adjuster, we would hire outfits to follow injury claimants we knew were faking. They could film them anywhere as long as they were in public.
But they could not film them inside their home, or behind a fence or anywhere where there is an expectation of privacy. That's considered an invasion of privacy.
You're not going to believe this, but I also worked as an extra in Hollywood between jobs one year. I learned that you can't put someone's face or any identifying item (like a license plate or phone number) into a movie because a profit will be earned from that film, and anyone in the film must first agree to be in the film.
As long as you're not making a profit from the videotape, you're still ok.

where there is a fight, there is a lawsuit(s). once the tape gets on the web, the lawyers will come after you for court appearance. if you destroy the tape, expect to do jail time as it is evidence. perhaps not the trouble you were asking about, but it comes with the territory of shooting crime scenes.
