This happens just about every time I try to fry something in olive oil, particularly when cooking chicken or meat.

if you're having that much trouble with olive oil, but still want that italian flavor, you could try frying in grapeseed oil instead.

grapeseed oil has a considerably higher flashpoint than olive oil so it won't splatter nearly as easily.

grapeseed has a bit lighter flavor than olive oil, and it is excellent for frying in.

Make sure the pan is hot and dry before pouring the olive oil.

Dry your food off before frying, dont' throw in wet veggies.... I'm not sure what you're cooking, but that's about all I can offer w/o knowing.

All cook stores carry a screen you can put over your pan while cooking . It works great! Have fun!!!!

add a little butter and turn the heat down.
