Can hard boiled eggs be over cooked? I was making some today and I didn't know how long to leave them but I was just wondering if they can overcook.

They sure do burn if you let the water get really low and if they will also explode if they are forgotten on the stove too long in a dry pot. Happened to me. I was doing a few, the pot boiled dry, and they exploded and the lid flew right off the pot. Exploded egg everywhere - not a pretty sight.

Yes they can overcook. The yolk will be a green color if they are cooked too long. The best way to cook boiled eggs is to put them in a pan of water, bring the water to a boil, turn off the burner, cover the pan and let them sit in the water for 20 minutes. When 20 minutes is up rinse in cold water and peel, they will be perfectly cooked this way every time.

I am a pro hard cooking hard boiled eggs!!!! My home ect teacher told us this....

Once the eggs get to a good rolling boil..turn the burner off and just let the eggs sit there in the water till it cools...your eggs will cook great and it won't have that grey color on the yolks!!!! Use fresh eggs also

she told me that about 8 years ago and cook them that way all the time...

Funny you should ask. I overcooked the boiled eggs I did this morning. I was going to bring them to a boil and remove them and let them sit for 20 minutes, but I forgot. And there they were, boiling away when I checked. I used them anyway, the yellow was pretty green, but it was for a salad, so it did not matter.

Sure they can overcook. The outer periphery of the yolk will turn green/blue/grey to differing degrees according to how much overcooked, and the texture will turn to rubber. It won't render the egg 'bad', or anything of that kind, but it will be less than an optimal pleasure to eat... :-/

And the companies that make hard boiled eggs for restraunt salads and caterers don't boil them at all. They steam them. Supposedly it is the temperature as well as time that gives the yolk the green tint. Saw this on T.V.

Yes, the whites are rubbery and the yolk has a green ring around it.

Generally you heat them until they come to a full rolling boil, take them off the heat; and cover them with the saucepan lid for 10 minutes. Then drain them and cool them quickly in cold water to stop them cooking.

perfect hard boiled eggs every time...put eggs in pan, cover with cold water,when water comes to boil set timer for 12 minutes, remove from heat and run under cold water to stop cooking...no green color and perfect yolks every time or I'll eat my chef coat!

YES, THEY WILL BE TOUGH. PERFECT HARD BOILED EGGS... PUT EGGS IN COLD WATER, PUT ON BURNER AND BRING TO A BOIL. REMOVE FROM HEAT AND COVER WITH LID FOR 15 MIN THEY WILL BE PERFECT.
