I like the meatball idea. But you could also do hamburger patties under the broiler stuffed with mozzarella cheese. Low in fat if it's broiled. And the melted cheese is a pretty yummy accompaniment to the cold pasta salad. PLUS...it's super easy to make.
OR...try a stuffed bell pepper under the broiler with melted feta or bleu cheese on top.

Hamburgers w/ pasta salad on the side. That sounds like a 4th of July meal, but I think it would be good for any day.

At the supermarket. Wegmans has it for sure, but I don't know if that is around where you are. You can find it next to the boca burgers and facon and other vegetarian meat type products. It will be refrigerated/frozen. I haven't tried it yet, but I am thinking about getting some next time I make chili. The fake chicken patties are awesome by the way.

Hi, how about sliced zucchini, it's in stores or alot of gardens right now, mix that up w/ oregano, maybe diced or stewed tomatoes;basically any fresh veggies will do.
Sometimes adding sauteed onion & bell pepper then the zuccinni, spices yummy! Good Luck

i would do:
* blue cheese stuffed burgers topped with caramelized onions
* meat loaf stuffed with hard boil egg & roasted red pepper
or spinach, feta cheese & black olives
* eggplant lasagna with bechamel sauce and gruyere cheese
