i have like some shrimp and lots of veggies. (tomatoes, celery those kinds of things, unfortunitly no onions or peppers but i might be able to go get some.) and a columbo loaf of breaad. thick french bread. anyway, i want to cook a fast good dinner. got any ideas??

srry i forgot i also have lettuce and sweet chili sauce. remember i have no onions or peppers!! and i also have tomatoes and those little green onion stick lookin thingys. thanx!

My fave way with shrimp and veggies is just to saute the veggies in a little olive oil and garlic (if you have garlic) until bite tender. Add some fresh or dried herbs such as basil, oregano, thyme, toss in chopped green onions, and stir, and then add shrimp. Cook until shrimp are pink and then toss it all over cooked pasta or rice. If pasta, add a little grated parmesan before serving.
Super simple and soooooo good - I am a pasta fiend! I hope this helps!

pan sear the shrimp
blanch your vegetables

slice your bread in half

top with shrimp and veggies

sprinklle grated parm

broil

Shrimp Creole Pronto

INGREDIENTS
2 tablespoons vegetable oil
1 cup chopped onions
1 cup chopped celery
1 green bell pepper, chopped
2 garlic cloves, minced
2 cups chopped, peeled tomatoes
1 (8 ounce) can tomato sauce
1/2 cup Holland House® Marsala Cooking Wine
1/4 teaspoon freshly ground black pepper
1 pound fresh or frozen, thawed, uncooked shrimp, peeled, deveined
1/2 teaspoon hot pepper sauce
4 cups hot cooked rice

DIRECTIONS
Heat oil in large saucepan over medium-high heat. Add onions, celery, bell pepper and garlic; cook 2 to 3 minutes.
Add tomatoes; cook 2 to 3 minutes, stirring occasionally.
Add remaining ingredients except rice; cook 2 to 3 minutes or until shrimp turn pink. Serve over hot cooked rice.
Note

1 (10 oz) package egg noodles may be substituted for 4 cups hot cooked rice.
