Anyone have any good recipes for baking boneless chicken? I like the zesty, garlicky kind of flavours. Any suggestions?

This is really gonna be hard to pick a Best Answer for, these all sound AMAZING..... by the time I got to the bottom of this page reading these, I was already so ravenous I could have taken a bite out of my keyboard. =D

Garlic Cheese Chicken Rollups

INGREDIENTS
4 skinless, boneless chicken breasts
1 cup dried bread crumbs, seasoned
1/2 cup grated Parmesan cheese
1/4 cup butter, melted
1 (7 ounce) package garlic cheese spread

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Pound chicken breasts until thinned out. In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.
Place rollups in a lightly greased 9x13 inch baking dish and drizzle any remaining butter or margarine over all. Bake in the preheated oven for 35 to 40 minutes, or until cooked through and juices run clear.

SPICY BAKED CHICKEN

1 tbsp. ground cumin
1 tbsp. paprika
1 tbsp. turmeric
1 1/2 tsp. cayenne (or to taste)
1 1/2 tsp. black pepper
2 tsp. salt
3 garlic cloves
6 tbsp. lemon juice
1 chicken, cut into pieces or may use chicken pieces, breasts, shrimp, or fish

Combine all spices and lemon juice. A mortor and pestle works well to smash garlic and combine all the spices. Skin chicken and slash pieces down to the bone. Rub spice mixture into chicken; spread pieces in a shallow baking pan and refrigerate 3 hours or overnight.
Preheat oven to 400 degrees. Brush chicken with a little oil. Bake 20 minutes; turn and bake 25 minutes (or until done). Baste 4 times during baking. Put pieces on platter, pour sauce from baking dish over pieces and serve. May garnish with raw onion and fresh coriander. Can also cook on the grill.

mix up a good quantity of parmesan cheese, plenty of garlic powder, black pepper, basil and onion salt (easy on the salt). Dip the chicken in egg, then in the cheese mixture. Place it on a baking sheet wiped with olive oil and bake at 375 for about 45 minutes to an hour, longer if you have a bone-in chicken breast. Boneless would take less time......cut one open early and see if it is cooked. Easy parmesan chicken :)

A quick marinade (1/2 hour or more) in truffle oil and chopped garlic and salt and pepper, and then a pan sear on a hot iron skillet is the key to a gorgeous chicken breast that can be served up in a bun with mayo and lettuce and maybe a little mustard.

make a few slashes in the breast with a sharp knife, then rub the chicken with salt, lemon juice finely chopped garlic and some corn flour. Cook the chicken over medium heat for 8-10 mins on each side. serve with green salad. there are some good chicken recipes on this site called toothfairyrecipes. check it out, u may like it.

Two very quick ideas that are so good:

Sprinkle with lemon pepper and bake or broil. Delicious with a salad (sometimes we cut up the chicken and put it in the salad).

Sprinkle with a seasoning blend called Montreal Chicken (by Schilling or Lawry's) and bake or broil. That's it.

yea what i like to do is:
get 4 chicken breats
next squeeze some limon on them
next sprinkle some garlic salt n pepper on them
rotate and do to the other side...its great and quick

then i just put them on the foreman grill for like 9 mins

BEEF-BACON WRAP CHICKEN BREAST
4 whole chicken breasts
8 slices of bacon
1 (4 oz.) pkg. dried beef
1 can mushroom soup
1/2 pt. sour cream
Wrap each breast in a slice of bacon. Cover the bottom of a flat greased baking dish, 9"x13" with chipped dried beef. Arrange the chicken breast over the dried beef then mix the mushroom soup and sour cream together and pour over the chicken breasts and dried beef. Bake at 275 degrees for three hours or at 400 degrees for a little over one hour. Serves 8.

STUFFED CHICKEN BREASTS
4-6 large boneless/skinless chicken breasts
1 package of taco seasoning
1 package (a roll) of Ritz crackers, crushed
1/2 package of cooked bacon (or any meat desired)
4-6 slices of white cheese (Jack, Swiss, etc)
1 egg
oil or olive oil spray to grease muffin tins
1/2 cup of milk
Spray a muffin tin with olive oil spray.
Beat the egg well with milk.
In a bowl, mix taco seasoning with the crushed Ritz crackers.
Pound chicken breasts flat. In the middle of each breast, place bacon and a slice of cheese.
Fold in the outside ends of breast toward the middle, forming a ball. Dip the breast in the egg wash, then roll in the cracker crumbs.
Place formed breast open side down into muffin tin.
Sprinkle each with a spoon of remaining crumb mixture and spray with olive oil.
Bake at 375 for 40 minutes.
During last 10 minutes of cooking time, spray again with olive oil.
Chicken pops right out, into a nice round stuffed chicken breast.

CHICKEN BREASTS WITH GARLIC CREAM

4 whole chicken breasts (8 pieces), skinned & boned
1 egg, beaten
1/2 c. butter
1/4 c. olive oil
2 c. whipping cream
1/2 tsp. salt
5 plump garlic cloves, crushed
1/2 lb. mushrooms, sliced
1/2 tsp. paprika
1/2 - 1 c. bread crumbs

Season chicken breasts with salt and pepper and dip in beaten egg. Roll in bread crumbs and saute in butter and olive oil until golden. Place in large baking dish. Over chicken breasts pour 2 cups cream mixed with salt and garlic. (It seems like a lot of garlic, but it cooks away!) Cover with foil. (You can refrigerate overnight at this point if desired.) Bake 45 minutes to 1 hour at 350 degrees. Add 1/2 pound sliced mushrooms 15 minutes before removing from oven, if desired. Dust with paprika before serving. Serves 4 to 8.

I highly recommend all Lawry's 30 min marinades! they have everything from garlic to teriyaki.
