The rule of thumb for Merlot is to put in the fridge for 30 minutes before you pop the cork. ( Or screw cap for the good stuff ) This will put just a bit of a chill on it and the bottle. As it warms to room temp it will give off more fragrance and seem to taste a bit better/nicer. With all white wines you should chill in the fridge completely and then 30 minutes before popping the cork remove from the fridge.. Try it...

In my wine lounge we keep our red wines at 63 degrees for serving. Cellar temperature of 55 degrees is too cool. I would say the ideal temp is 63-65 degrees. If you like it cooler, by all means drink it that way. At 63 degrees you can feel a slight coolness in the mouth.

You serve it and drink it, at whatever temperature you enjoy it!
It *should* be served at slightly lower than room temperature, but it isn't *supposed* to be served at anything other than what you prefer. I actually like some of my reds slightly chilled.
After you open it, if you don't finish the bottle, it will keep longer if refrigerated.

It should be stored at a temperature in the low fifties (F) if possible and drunk at a temperature in the mid-sixties.
