I like the frozen yogurt idea. But if it gets too boring or not tasty enough you can always throw in some fresh/dried fruit or low fat granola. Also, how about Jell-o? You can also toss in some canned fruits before it sets up. If you can't resist the temptation, though, put up the temperature in your freezer to make your ice cream really hard, that way it will be more difficult to scoop out a lot of ice cream :)

Although they can be sugary, you can never go wrong with shaved ice drinks or snow cones.

Also, I eat lots of watermelon in the summer time!

how about freezing your favorite fruit juice into ice cubes like guava nectar and letting them thaw a little for a shaved ice treat. or take your favorite non fat yogurt and freeze it. comes out nice and you can eat it.

try...

-strawberry mint salad: just mix strawberries, mint leaves and balsamic vinigrette. perfect light snack.
-dried fruits: if you find one you like, they become addicting. plus, they're nutrional. personally, i like dried pineapple and trader joe's dried apple rings with cinammon
-snyder's new whole grain chain of snacks: i like the pretzels
-soy/rice chips: hanes makes excellent, all natural flavors

hope these help!
