Honestly? Very little.
Though 2.4 GHz spectrum is getting crowded. WiFi also works on 2.4 GHz range. Even if the phone can auto-jump channels, choices are still limited.
5.8 GHz offers better range, and with new tech, with spread spectrum transmission, you have far less chance of interception.
However, having a name-brand phone still makes a difference. I have a Panasonic phone, the original Cordless, BEFORE 900 MHz came along. It still works fine today, through walls at 50 yards, up to 100 yds in the clear. Not even the generic 900 MHz phone I got later can match that.

900 Mhz used to be the norm. Then 2.4 Ghz came along which gave a clearer signal than the 900 Mhz. When the 5.8 came along, it also made the signal clearer AND helped with security issues. The higher the number, the farther away from the base you can travel. Usually you will get a clear signal unless outside interference happens. That comes with electrical lines, etc.

the difference is that the one with thegreatest number can be used from a larger range that the other one. it depends on hoe big your house is to pick the right phone.
