Chicken or shrimp stir-frys. Easy to prepare. Just add red or and green peppers with onions if you like. Really delish and takes no time at all.

I agree with you on not wanting to use the oven when it's hot! So, I usually use the BBQ grill to cook everything - from pizza to burgers to sandwiches. Really, anything you put in the oven can be put in the grill, you just need to keep your eye on it.
Since there are so many things (like meats and dishes) to choose from, here is my favorite sauce recipe. It can be used on chicken, ribs, steak, ham, you name it!! ...
1/2 onion, minced
4 cloves garlic, minced
3/4 cup bourbon whiskey
1/2 teaspoon ground black pepper
1/2 tablespoon salt
2 cups ketchup
1/4 cup tomato paste
1/3 cup cider vinegar
2 tablespoons liquid smoke flavoring
1/4 cup Worcestershire sauce
1/2 cup packed brown sugar
1/3 teaspoon hot pepper sauce, or to taste
In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

Easy summer desserts....................
Neopolitan Ice Cream Cake:
store-bought ready-made angel food cake (I use the one that has the hole in the middle)
carton of neopolitan ice cream
16 oz. cool whip
chopped nuts or toasted coconut
Slice cake into 4 layers. Remove entire block of ice cream from carton and separate the flavors into bowls. Soften slightly. Place bottom of cake on plate. Spread with strawberry ice cream. Add another cake layer and spread with chocolate ice cream. Add another cake layer and spread with vanilla ice cream. Place top of cake on top. Frost with cool whip. Press chopped nuts or toasted coconut onto top and size. Freeze. Work quickly when assembling. If the ice cream starts getting too soft, you may have to stop halfway through and pop it in the freezer to firm things back up. Really pretty when sliced and you can see all the layers/colors. You can also make the cake the same way except use vanilla ice cream only and mix a can of frozen pink lemonade into ice cream. Frost with cool whip and top with berries.
Twinkie Pie:
1 box twinkies
1 large (or 2 small) packages instant vanilla pudding
1 large can crushed pineapple (do NOT drain)
16 oz. Cool Whip
Slice twinkies lengthwise. Place in pan cream-side up. Prepare pudding according to directions. Pour over twinkies. Pour pineapple with juice over all. Top with cool whip. Chill.

I love fresh tomatoes sliced, fresh mozzarella sliced and fresh basil mixed together with some extra virgin olive oil...so yummy!
Buy a George Foreman grill at local store, it's very reasonable and cooks all your meats in no time...without heating up your house...just spray some pam on the grill throw your meat on and close the lid....no need to flip it just check it after a couple of mins. cuz it cooks fast...and another bonus it's easy clean up as long as you get the one with removable grills..

Cold Tuna Macaroni Salad
INGREDIENTS
1 (12 ounce) package macaroni
3 tomatoes - peeled, seeded and diced
3 stalks celery, chopped
1 (12 ounce) can tuna
1 1/2 cups light mayonnaise
1 tablespoon Italian-style salad dressing
1 tablespoon white sugar
1 pinch ground black pepper
DIRECTIONS
In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
In a large bowl, combine the pasta, tomatoes, celery and tuna.
Prepare the dressing by whisking together the mayonnaise, salad dressing, sugar and pepper. Add to pasta salad, mix together, and refrigerate for 1 hour.
Allspice String Beans
INGREDIENTS
1 tablespoon vegetable oil
2 cloves garlic, crushed
1 pound fresh green beans, trimmed and snapped
1/2 cup water
2 teaspoons ground allspice
salt and pepper to taste
DIRECTIONS
Heat oil in a medium saucepan over medium heat. Cook and stir garlic until lightly browned. Mix in green beans and water, and bring to a boil. Stir in allspice, salt, and pepper. Cover, and simmer 20 minutes, until green beans are soft.

Rice
Chopped Onions
Chili
Lettuce
Cheese
Tomato
Top with a few Fritos
Very easy, fast, doesn't heat the kitchen and tastes great!

MARINATED EGGPLANT
INGREDIENTS
o 1 young eggplant, peeled and diced
o Juice of 2 lemons or lime
o 1 med. red onion, chopped
o 1 garlic clove, minced
o 1 red pepper, diced
o 6 large mushrooms, sliced
o 1/4 cup fresh basil, chopped
o 2 T fresh parsley, chopped
o 2 T fresh cilantro chopped
o Apple cider vinegar to taste
METHOD
Combine all, coat with apple cider vinegar and let marinate about two hours before serving. Be careful when choosing eggplants for raw preparation. Ones with a lot of seeds inside tend to be bitter. Remove excess seeds when possible.

mix in a blender rice, chicken, curry, garlic, lots of salt, a tad or sugar...it prevents cancer..it worked for fro my father and got rid of his cancer. he had large tumors and they disapeered after a year after he drank this every day
