for the price of a couple loaves of Italian (or French) bread, and dozen eggs, you could make an overnight french toast casserole. layer it in a couple 9x13 pans. It has to be quite moist, as you will bake it off in the morning. Sprinkle extra nutmeg on the top, and have some warmed butter syrup... Yummy

Cut up different coloured fruits (e.g. strawberry, peaches, pears, grapes, pineapples). Make sure the fruits will not discolour quickly (small berries are great choices).
In a clear cup/glass, layer alternately the cut fruits and a layer of yoghurt. Dust icing sugar over every layer of fruit. The last layer should be yoghurt, and you can top it with anything you like - cocoa powder, nuts, etc.
They look really nice and they taste good and are simple and fast! Seasonal fruits should lower the price for this recipe.
Also you can try bruschetta? Dice up tomatoes and season with salt and pepper. Mix with olive oil and chopped up basil leaves (mixture should not be watery).
On some toasted bread (baguettes are great for this), rub some garlic on, and heap on the tomatoes! I've seen a version that even put sprigs of mint/parsley on top as garnish. Bruschettas taste really good and are inexpensive, and look fabulous. Also the tomato is high in anti-oxidents and in water content, which is great for breakfast.
Word of caution though, this can get soggy so best to heap on the tomatoes just before serving.

This may not be up to culinary standards but every time I make it people LOVE it.
take a glass casserole dish, place slices of bread on the bottom, any kind.
Whip 8 eggs and 2 cups of milk together and pour over the bread.
Cook and crumble any type of sausage you like, I like to use a maple flavored sausage. "sprinkle" over the top of the egg mixture.
I have also added left over baked potato chopped up, you could throw in mushrooms, what ever.
Place in the refrigerator over night, this is very important to let the egg soak into the bread.
Top with cheese and bake in the oven for 45 min on 350 the next morning. It's delish! Let me know what you think.

FRENCH TOAST BREAKFAST
8 slices white bread cubed
pkg softened cream cheese cubed
8 eggs
1 cup milk
1/2 cup maple syrup
In a greased (preferably glass) baking dish make a layer using half of your bread. Then the cream cheese and then the rest of the bread.
Whip together your eggs, milk and syrup.
Pour over the bread making sure to moisten all of the bread.
Cook covered at 350 degrees for about 25 minutes.
Uncover and cook for another 10 - 15 minutes.

this is a great recipe. serves 24
Apple-Raisin French Toast Casserole
INGREDIENTS
2 cups brown sugar
2 teaspoons ground cinnamon
1 cup butter, melted
6 apples - peeled, cored and sliced
1 cup raisins
2 (1 pound) loaves French baguette, cut into 1 inch slices
12 eggs, lightly beaten
3 cups milk
2 tablespoons vanilla extract
1 tablespoon and 1 teaspoon ground cinnamon
DIRECTIONS
Grease a 9x13 inch baking dish. In a large bowl, mix together brown sugar and 1 teaspoon cinnamon. Mix in melted butter. Stir in apples and raisins until evenly coated. Pour into prepared pan. Arrange bread slices in an even layer over apples.
In the bowl, whisk together eggs, milk, vanilla and 2 teaspoons cinnamon. Pour over bread, making sure every slice is fully soaked. Cover with aluminum foil, and refrigerated overnight.
Preheat oven to 375 degrees F (190 degrees C). Remove dish from refrigerator while the oven is heating. Bake covered for 40 minutes. Remove cover, and bake 5 minutes. Let stand 5 minutes before serving.

Cook 2 lbs. of ground meat. You need a bag of tater tots. Stir tater tots and ground meat together and place in baking dish. I use 6 eggs, 1/2 c. milk and 2 tbsp.butter, chopped cilantro, bell pepper, garlic and onion. You can basically make it out of what ever ingredients you want. I like to cook the cilantro, bell pepper, onion and garlic in the butter a little before adding to the egg and milk. Mix all ingredients together then pour over tots and meat. Bake at 325 for 30 to 40 mins.. Top with grated cheese. Keep a eye on the egg that it doesn't over cook. Good luck!!

What about quiche?
It woud be really easy to prepare ahead, you could put breafast-type fillings in them like bacon & tomato or whatever you like, and it can be served hot, cold or room temp.
I love eggs for breakfast and quiche is the most portable of egg dishes. Plus you can always "cheat" and buy a few pie crusts, then you just have to worry about the fillings!
3 or 4 quiches should be about enough. And it's no trouble to do many different kinds. (If you want ideas for filling, think about your favourite omelets.... I like ham, asparagus & swiss cheese; tomato, bacon & cheddar; mushroom, onion & cheese; smoked salmon and cream cheese; western style with bell peppers, onions & ham if you want; anything you can imagine is good in a quiche!)

This is always a hit for me:
Take a large glass baking dish
Place six slices of bread (white/wheat) on the bottom. Mix up ten-twelve eggs in a bowl with 1/2 cup milk
Place six slices of cheddar cheese over the six pieces of bread. Brown up bacon/sausage (or both) and place over the cheese. Place another six slices of cheese over that and pour egg mixture over cheese. Bake in over uncovered for 30-45 minutes or until eggs fluff up and are a golden brown. Depending on size of baking dish, you may need to make two. ENJOY!

I love those fancy egg dishes with Hollandaise and maybe smoked salmon. For that matter, anything with smoked salmon. Maybe the art here is not in creating something unusual (after all, this is breakfast), but in making it pretty. Little lox and cream cheese thingies with capers and onion. Salmon or mushroom flavors in phyllo pastry can be great for breakfast too.
