Keep it simple, i am a dad, watching 2 kids, and would like to make something nice for the wife when she gets home today.
I'm looking at 30 mins prep and ready to eat by 45 mins. Any suggestion outside of hamberger helper?

Here's my chicken casserole recipe. There are no measurements. YOU CAN'T SCREW THIS UP. The amounts you use will depend on how big you want it. I make mine big enough for 4-6 so I'll give you an estimate of the amounts I use.

Mix together:

Chopped COOKED chicken (sometimes I use a whole boiled chicken, sometimes I saute and chop a couple of boneless skinless breasts, sometimes to save time I use 2 cans of chicken breast or a whole roasted chicken from the deli), frozen mixed veggies (I use probably a 16 oz. bag), a can or two of whatever "cream of" soup you like (I use 2 cans), a handful of cheddar cheese, a handful of Durkee French-fried Onions, a little salt and pepper. You can also add some canned mushrooms and whatever other veggies you like. Dump it all in a casserole dish. Bake at 350 until it gets hot and bubbly. If it's not quick enough, bump the temp up to 400. There's nothing raw in this, so all you have to do is get it bubbly. Then throw a few more of the Durkees on top and a little more cheese. Put it back in the oven long enough to brown the onions and melt the cheese.

Serve it with a salad and whatever bread or rolls you like.

Very easy. Very fast. Very yummy!

Sloppy Joes:
1 to 1 1/2 pounds ground beef, chuck, or sirloin
1 14 to 15 ounce can tomato sauce
3 tsp. grill seasoning
1 tsp. oregano
1/2 tsp. paprika
Salt and pepper to taste
2 tbsp. worcestershire sauce
1 tbsp. apple cider vinegar
1 onion, chopped
3 garlic cloves, chopped

Cook ground beef in skillet and break into chunks. Drain off fat. Add in chopped onion and cook until almost tender with the beef. If pan gets too dry add a little olive oil or water if you like. Add in your chopped garlic when onions are almost done. Add in your seasonings, sauces, and vinegar. Cook for 30 minutes covered or until sauce is thick and serve on buns. Serve with macaroni and cheese and a tossed salad.

Camembert Chicken

INGREDIENTS
vegetable cooking spray
5 skinless, boneless chicken breast halves
3 tablespoons and 1 teaspoon butter
2 tablespoons and 1-1/2 teaspoons all-purpose flour
1-2/3 green onion, chopped
1-1/4 cups milk
1 tablespoon and 2 teaspoons coarse grained prepared mustard
5 ounces Camembert cheese, cubed
1-2/3 avocado - peeled, pitted and sliced

DIRECTIONS
Spray a skillet with cooking spray, and place over medium heat. Fry chicken breasts in the skillet until cooked through, about 20 minutes.
While the chicken cooks, melt butter in a small skillet over medium heat, and stir in flour until smooth. Stir in green onion, and cook, stirring constantly, until the mixture starts to brown. Gradually mix in milk, and continue cooking and stirring until the sauce is thick and smooth. Remove from heat, and stir in the mustard and Camembert until melted and smooth.
Remove chicken to serving plates, and top with slices of avocado. Pour sauce over the chicken, and serve.

serves 5

This dish goes well with steamed fresh vegetables

Chicken/ steak stir fry.

Chicken, veggies (onion, mushrooms, peppers, etc), garlic salt or actual garlic cloves, salt and pepper. Plus some oil to stir fry with.

Place chicken in hot pan with garlic salt or garlic cloves. Saute until white. Add in veggies. Continue to saute until veggies are cooked. For a side, put together some garlic bread or corn/green beans.

Not too unhealthy and tastes great!

Tonight we're having lazy souvlaki.
I buy the already marinated & sewered souvlaki pork, pita bread, and tzatziki sauce.
Then I just have to grill the pork, dice up a tomato and shred some lettuce, and warm the pitas.
Everyone puts their own pita together at the table so it's really easy & quick, and kids love it cause they get to do it "their way"!
