OR how convenient that their god (or ANY god for that matter) is invisible, never shows himself and you have to DIE to meet him.
Sounds awfully convenient to me.

Perhaps, but we don't believe in God's perfection because it's convenient. We believe in it because it's the truth.
Christians believe plenty of things that are not convenient -- at least by the world's standards.
For instance, we believe that there are certain behaviors that are immoral -- and many of these behaviors are allowed and even celebrated in popular culture.
It's certainly not convenient for us to believe that -- not with all the messages that the secular world bombards us with.
Another example: many people support legalized abortion, 98% of which are done for the sake of convenience.
Yet Christians see abortion as evil -- which is inconvenient. But it's true.
If anyone is guilty of acting out of convenience, it is atheists -- not Christians.
After all, rejecting God makes it easier for a person to rationalize certain behaviors. Remove God from the picture, and all of a sudden there is a list of behaviors that a person used to feel guilty about, but doesn't need to feel guilty about anymore.
I can't think of a bigger "act of convenience" than that.

Well, I used to be a Christian and am a more atheistic-leaning Agnostic now. But I'd say, they can't, because nothing is perfect. If they claimed God to be perfect, that'd be proving that God can't exist because the world isn't free of problems and hate, the Atheists would just use that against that Christians.
But besides, we all need to have bad, even though it's unfair and usually comes at the expense of others (meaning, for example, that stereotypical thing that if one would look at the hungry kids in Africa, one would realize how lucky he or she is to have food every day). If the world was perfect, and if we went to heaven (supposedly perfect and free from worry and pain in all of its forms), our existence would be pointless. That'd only be convenient for a few days, until everybody wants more, and then has to start being cruel and step on one another once more, because they'd need something better to keep them happy.

It's convenient to have air to breathe, it's convenient to have food to eat, it's convenient to have a roof over our heads. Convenience is a GOOD thing!

I'll be impressed if a theist can even give me a good definition of "perfect" that can actually be applied to some entity (even allowing imaginary entities, since I'm being charitable).

It doesn't really matter if it is "convenient." It only really matters if it is true.
The Bible teaches certain qualities and attributes about God. You either believe and accept the Bible or you don't, but whatever God is like is outside of ourselves and what we choose to imagine or dream about him. We don't get to define God. He IS.
