Go to START
Go to CONTROL PANEL
Go to ADD & REMOVE PROGRAMS
In that box you should see the windows VISTA.
Once you do see that VISTA. Click onto the CHANGE/REMOVE button.
Now all you have to do is follow the steps from there.
Good luck.

I have never been a fan of upgrading or uninstalling/reinstalling operating systems. There is just too much that can go wrong when files from the removed OS are left behind. If you want your system in the best shape possible, BACK UP IMPORTANT FILES, do a low level format of the hard drive and install the OS of your choice.

The best thing to do would be to format your hard drive and start from scratch. Before you do so, make sure you backup all of your important data (like My Documents, your media, pictures, etc). Then, when you are ready, stick your MCE CD in and boot from it. You will be presented an option to format your HD before installing during the setup. If you require drivers for your system, check your PC's manufacturer's website.

If you have the XP CDs and do not wish to keep Vista I would Quick Wipe the drive and do a clean install. That way you don't have "Ghosts in the machine".
Use Kill Disk.
