Apple Crumb Cake
(Makes 18 servings)
1/2 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup plain yogurt
2 large baking apples, peeled, cored and diced small (about 2 cups diced apples)
Topping
1/2 cup brown sugar
1/2 cups chopped pecans
1 teaspoon cinnamon
1 tablespoon unsalted butter, melted
Heat oven to 350 degrees. Grease and flour an 8 x 8 inch cake pan. In large bowl, cream butter and sugar with electric mixer until light and fluffy. Add eggs, on at a time, blending well. Stir in vanilla. In another bowl, mix together flour, baking powder, baking soda and salt. Add flour mixture to creamed mixture in batches alternating with the yogurt; mix until well blended. Stir in apples and pour into cake pan.
In small bowl, stir together brown sugar, pecans, cinnamon and butter. Sprinkle evenly over the cake. Bake until top is golden brown, and a toothpick inserted in the center comes out clean about 50- 55 minutes. Cool in the pan for 15-20 minutes, turn the cake onto a wire rack and then invert onto serving platter. Enjoy!

* OOPS, this one uses vanilla yogurt, but the following one uses plain yogurt...
Ready in: 1-2 hrs
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 18
Ingredients:
1/2 cup butter -- at room temperature
1/4 cup brown sugar
1/2 cup sugar
1/2 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 cup raisins
3 medium apples -- peeled, cored, and coarsely chopped
1/2 cup chopped walnuts
1 cup nonfat vanilla yogurt
***TOPPING***
1/4 cup brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon cinnamon
2 tablespoons chopped walnuts
Directions:
Preheat oven to 325°F. Lightly grease a 9x13" pan. In a large bowl, cream together the butter and sugars. Add the vanilla and eggs; beat together.
In another bowl, sift together the flour, baking powder, baking soda, cinnamon, and nutmeg. Add raisins, apples, and walnuts; toss lightly to coat.
Add the flour mixture to the butter mixture and mix thoroughly. Gently fold in the yogurt until evenly mixed. Pour the batter into the baking pan.
To make the topping, mix together the brown sugar, flour, cinnamon, and walnuts. Sprinkle the topping over the batter. Bake the coffeecake for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes on a wire rack before serving.

DOUBLE APPLE CAKE
Serves 10
2 Granny Smith apples
2/3 cups packed brown sugar
1/4 cup butter, softened
1 egg
1/4 cup low-fat plain yogurt
1 teaspoon vanilla
1 2/3 cups sifted cake and pastry flour
1 1/2 teaspoons ginger
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
2/3 cup applesauce
Topping:
3 tablespoons packed brown sugar
2 teaspoon water
1/2 teaspoon cinnamon
Preheat oven to 350 degrees.
Peel, core and thinly slice apples. Beat sugar and butter until crumbly. Beat in egg.
Beat in yogurt and vanilla. Combine flour, ginger, baking powder, baking soda and salt; fold into butter mixture alternately with applesauce.
Spoon in a lightly greased 9-inch springform pan.
Arrange apples in overlapping concentric circles on top.
Topping:
Combine sugar, water and cinnamon; brush over apples. Bake for 40 minutes or until cake tester comes out clean. Let cool in pan on rack for 5 minutes.
Remove side of pan; let cool completely.

I am not sure if this is what you were looking for but this recipe calls for both plain low fat yogurt and apples. It is a very delicious apple streusel cake..one of my favorite recipes!
INGREDIENTS
1 1/2 cups packed light brown sugar
3/4 cup all-purpose flour
1/2 cup butter, chilled and diced
2 teaspoons ground cinnamon
1 cup chopped walnuts
3 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 cup butter, room temperature
1 1/2 cups white sugar
3 eggs
2 teaspoons vanilla extract
16 ounces plain low-fat yogurt
2 Granny Smith apples - peeled, cored and finely diced
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt cake pan.
To make streusel: In a medium bowl, mix brown sugar, 3/4 cup flour, and cinnamon. Cut in the butter with a fork until crumbly. Stir in walnuts.
In a medium bowl, stir together 3 1/4 cups flour, baking powder, and baking soda. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each. Then stir in the vanilla and yogurt. Gently stir in the flour mixture just until blended.
Pour 3 cups of the batter into the Bundt pan, sprinkle with 1/4 of the streusel, and layer with apples. Sprinkle with 1/2 the remaining streusel. Pour in the remaining batter, and top with the remaining 1/4 streusel. Lightly pat the top layer of streusel so it sticks to the cake batter.
Bake 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack 15 minutes. Place cookie sheet over pan and carefully invert both. Remove Bundt pan, and let the cake cool completely.

APPLE YOGURT CAKE
2 1/4 c. unbleached flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 c. sugar
2 eggs, beaten
2 egg whites
1/2 c. corn oil
1 c. plain non-fat yogurt
2 1/2 c. unpeeled cooking apples, cored and diced
1/2 c. nuts, chopped
GLAZE:
2 tbsp. frozen apple juice concentrate, thawed
1/4 c. sugar
Preheat oven to 350 degrees. In a large mixing bowl, combine flour, baking powder, baking soda, and sugar. Stir in beaten eggs, egg whites, corn oil, and yogurt. Mix well. Add the apples and nuts. Pour the batter into a bundt pan sprayed with non-stick vegetable coating. Bake in preheated oven for 40 minutes or until a toothpick inserted in cake comes out clean. Cool on wire rack.
GLAZE: Combine concentrate and sugar in saucepan. Cook over low heat until sugar is dissolved. Bring mixture to a boil, low heat and simmer 5 minutes. Brush on cooled cake if desired.

I wouldn't if I were you. Being precise and accurate with the ingredients you use is VERY important if you want to make sure that the product turns out just the way you want it to. You should probably buy some cake flour or try a new recipe...but definately do not use plain flour. Best of luck!
