Yes - he does. Through our prayers we can change the mind of God. There are examples in the bible. One of which is the story where Abraham prayed to God for Sodom. God said he was going to destroy the city because of their wickness. Abraham continuously prayed to God. He asked God if there are 50 righteous people, will you destroy it? God said he would not destroy it if there were 50 righteous people. Abraham continued to pray until God said if there are but 10 righteous people in the city, he would not destroy it.

Well God did regret that He made mankind, so He destroyed all but 8 in the flood, the 8 were saved in Noah's ark/boat along with animals.

But since God did save some of them, i guess He didn't change His mind about humans being on the earth.

God has a plan for mankind. We have a hard time understanding what God's plan is, but that don't change the facts.

No.

God has made a number of promises in the Bible which never happened, not because He changed His mind but because the promise was conditional. Like "I will bless you IF you keep My commandments".

When God said something like "I repent because I made man", the word repent should have been grieved, so it would have read more like "I am by because of the men I created"

No.
Although Christian theology is based on the fact that God does in fact change his mind. The Christian theologians claim that God revoked the Old Testament, and sent the New Testament in its place, 'cause He changed His mind about Jews being the chosen people.

Yes. In Sodom and Gommorah. Speaking to Abraham he decided to let Lot get out before he destroyed it while before he was just going to destroy it.
And when he sent Jonah to a city as a warning of coming events. The people repented and Jonah felt like a fool.
