Doesn't this annoy you? There are five customers in the joint and you get stuck next to Hacking Old Man or Screaming Little Brat.

What can we do to stop this?

Requesting a different table if plenty are available will solve your problem. You won't be able to change the habit, unless it's a place to patronize regularly and they come to know you and your preferences.

Every establishment has its own approach to seating. Considerations include fair distribution of patrons among the waitstaff and the physical layout of the dining room. Especially during "off-peak" hours, it's common for only sections of a dining room to be open, in order to minimize the time and effort required to maintain the dining room. It's also common practice to try and seat people at less desirable tables because they expect people to object and request a different table, and the less desirable tables will remain vacant until they find the patron(s) who don't object.

Yes but I think the reason is in the layout of the tables and which waiter/waitress has them. Part of the hostess job is to make sure that all of the wait staff get a fairly equal portion of the customers.

Ask to be moved. Be very blunt you are a customer. They realize you probably don't want to be seated next to others its just for the waitresses sake they do so anyways. If you don't ask then you will be stuck there.

It's called 'Stacking" It's easier for her to stack you all nicely together, then she knows how many seats she has left! And if she sits you next to the old guy who's 'Hacking' it means she knows no one is going to sit near him on their own, so she will find 'suckers' who do what she tells them, and she makes them sit next to him! You politely ask the hostess to change your seating to a more quiet corner... and problem solved!

It is a matter of consolidating your work area, the less steps you have to take to give some one their bill or another cup of coffee, after you have been on your feet all day then it makes sense.

They do it for the convenience of the waiter or waitress. But if you ask for a different table, they will give you one.

And also you don't have enough elbow room to put the food in your mouth. What to do, no imagination.

It is your prerogative to be asked to be moved due to personal reasons.
