All the honey is doing is crystalizing and it's natural. But put it in the microwave for a couple of seconds and it will go back to liquid form. ANd Yes it's still good for you. Especially if you use it as a substitude for sugar.

Don't toss the stuff out! Place the jar in a pot of hot (NOT boiling) water for about 10 minutes and give it an occasional stir to mix it up. Then let it cool off - voila - brand new honey!

Just heat the container in a pot of simmering water or in the microwave (plastic "bears" may melt so be careful) and the honey will be as good as new!

Of course. It's still sugar (as you point out), so can be used as such. You just don't want to use it as honey anymore since it's basic make-up has altered.
