Butter...

Banana Nut Bread

Prep Time: 10 minutes
Cook time: 1 Hour, 10 minutes
Makes – 2 9x5 loaves

1 cup white sugar
1 cup brown sugar (packed)
3 eggs
2 cups very ripe mashed bananas
3 cups flour
1 ¼ cups buttermilk
1 ½ teaspoon baking soda
1 ½ teaspoon baking powder
1 teaspoon vanilla extract
1 cup butter
1 cup chopped nuts (more if desired)
1 teaspoon cinnamon

Preheat oven to 300 degrees F

Cream together butter and sugar. Add one egg at a time, beating well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in flour, cinnamon, baking powder, and baking soda. Stir in nuts, if desired. Pour batter into 2 greased 9x5 loaf pans.

Bake 70 minutes in preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.

The first key to great banana bread is very, very ripe bananas. The second is separating the egg white, beating it untill you get "stiff peaks" and incorporating the egg white into the batter by folding it in. I think I use two eggs. I use 2-cups flour,1-cup sugar, baking soda and 1-tbls of warm water, chopped pecans, and a stick of butter...butter is best. shortening is for pastry. not to mention its high saturated fat content.

MMM, butter tastes better, both in banana bread, and spread on a slice still warm from the oven. Like a slice of heaven to me!

Anything in baking, banana bread, cookies etc - Butter and only Butter! That's the truth, the whole truth and nothing but-der truth. (excuse the pun)

I like mine lightly toasted too :)
