To keep flavor intact, try just substituting half the fat with a substitute--like 1/2 butter, 1/2 plain yogurt or unsweetend applesauce. This will also help keep the texture more like the original.

Well, I use Smart Balance buttery spread. Which has no trans fatty acids, is non-hydrogenated & patented blend to help improve cholestrol ratio. Plus it only has 80 calories per serving, 9g of total fat & 2.5g of saturated fat. I'd suggest checking it out. Plus it tastes really good also. Other than that, I'm not sure of an ingredient that would work that isn't at least a type of butter or what not... Not sure if Apple Sauce or etc would work. hehe. But that is pretty interesting if it does.
And to spray the pan you might try using Extra Virgin Olive Oil. I currently use Mazola Pure, but I'm sure there's others out there just as good. Or maybe try I can't believe it's not butter, I've found it does taste really good & is low on fat & calories.

You can try to substitute with canola oil, equal measurements. You can also try sour cream, yogurt, applesauce (depends on what flavor your cake is), any fruit puree like a small jar of babyfood.

Butter isn't all that bad. but if you want to use something for less fat I guess apple sauce would be a good choice. but whatever you do don't use margarine. That is one of the worse things you can eat. way worse than butter.

Parkay Margarine works well in baking breads so I think it could work for cakes.

Margarine is a good substitute. It usually contains less calories and is made with vegetable oils instead of animal products.

if you are looking to cut the fat in the recipe i would suggest applesauce... or if you like you can subsitute baby food (the flavour that would go with what you are making) carrot for carrot cake for example
