just wondering if anyone has any recipes other than tuna noodle casserole or tuna salad. Thanks!

Tuna pizza


INGREDIENTS:
1 Boboli pizza crust
15 oz. can white beans, rinsed and drained
2 Tbsp. white wine vinegar
salt and pepper to taste
6 oz. can solid pack white tuna, drained
1 jar roasted red pepper, drained, chopped
14 oz. can diced tomatoes, drained
1/4 cup grated Parmesan cheese
PREPARATION:
In medium bowl, combine beans, vinegar, and salt and pepper to taste. Mash beans, leaving some texture in the mixture. Spread bean mixture over crust. Top with tuna, red peppers, and tomatoes. Sprinkle cheese over all and serve.




Tuna and Spinich Risotto

INGREDIENTS:
2 Tbsp. olive oil
1-1/2 cups arborio rice
2 garlic cloves, minced
1 cup dry white wine or chicken broth
1/4 tsp. pepper
1 (14 oz.) cans ready to serve chicken broth
2 cups shredded fresh spinach
1/2 tsp. grated lemon peel
12 oz. can solid white tuna, drained
1 Tbsp. butter
1 cup grated Parmesan cheese
PREPARATION:
Heat oil in large skillet and add rice and garlic. Cook and stir for 2-3 minutes until rice is coated. Add wine, pepper, and 1 can chicken broth. Bring to a boil, then reduce heat to mdium and cook mixture for 8-10 minutes, stirring frequently, until liquid is absorbed.
Add 1/4 of the remaining broth at a time, stirring rice until liquid is absorbed. Add spinach, lemon peel and tuna. Cook and stir gently until spinach is wilted. Stir in butter until melted along with 1/2 cup cheese. Sprinkle with remaining cheese and serve.

Tuna Tortellini

INGREDIENTS:
1 lb. refrigerated or frozen cheese tortellini
2 cups frozen baby peas
12 oz. can tuna in olive oil
PREPARATION:
Cook the tortellini in boiling salted water until tender, adding the peas for the last minute of cooking. Drain. Return to pot and add the tuna in its oil, along with salt and pepper to taste. Heat through, stirring gently.

Tuna Croquettes

1 can (12 ounces) tuna, drained and flaked
24 saltine crackers, finely crushed (1 cup)
1/3 cup plus 1 tablespoon mayonnaise
2 green onions, finely chopped
1/4 teaspoon black pepper
2 tablespoons vegetable oil

Spicy Lime Tartar Sauce:

3 tablespoons mayonnaise
1 garlic clove, minced
1 teaspoon finely grated lime peel
1 teaspoon fresh lime juice
1 teaspoon minced jalapeno chile

Preparation Time: 20 minutes
Cooking Time: 8 minutes
Serves 4

1. In a bowl, stir together tuna, 1/2 cup of the crumbs, the mayonnaise, green onion and pepper. Form into 4 patties. Coat patties with the remaining crumbs.
2. Heat the oil in a large, nonstick skillet over medium heat. Add the tuna cakes and cook, turning once, until golden brown, about 8 minutes.
3. Meanwhile, whisk together tartar-sauce ingredients. Serve croquettes with the sauce.

Tuna burger patties: same concept as a salmon pattie, take the can of tuna...mash it up...make it into patties and fry it in a little bit of olive oil. Put it on a bun w/ your favorite burger toppings and enjoy.

tuna salad sandwiches: Tuna, mayo, chopped onions and vegetable flakes. On your choice of bread and a slice of cheese mmm!
w/ tomato slices is good too

tuna melt: Tuna salad w/ chopped onions. Scoop onto large bun bottom. Big slice of cheese or shredded cheese on top. Pop it in the oven for 10 mins give or take. Enjoy.

I like canned tuna. Canned tuna is my friend. Canned tuna makes me happy. Canned tuna can make me smile. Canned tuna forever hoo rah.....

I put my canned tuna on a salad with some cottage cheese and shredded cheddar... bacon bits and some veggies.... yummy...

CANNED TUNA WITH PEAS

2 tbsp. oil
1 med. onion, sliced
1 tbsp. parsley
1 tbsp. tomato sauce
2 c. peas
2 med. cans tuna fish
1/2 tsp. pepper
1/4 tsp. salt
1/4 tsp. oregano

Heat oil in pan, add onion and parsley and brown. Add tomato sauce, peas and enough water to cover and cook 10 minutes or until peas are tender. Add tuna to mixture and cook 5 minutes over low flame. Add pepper, salt and oregano. Cook 5 minutes longer and serve. Serves 4.
