250 calorie dinner
1 lb chicken breasts, cut in strips
1 (2 1/2 ounce) jar sliced mushrooms, drained
1/2 cup fat-free Italian salad dressing
1/4 cup chopped onions
2 tablespoons lowfat margarine
1 medium zucchini, sliced (about 2 cups)
1 large tomato, cut in wedges
6 slices low-fat cheese, cut in small pieces
In shallow dish, place chicken with mushrooms.
Cover with dressing.
Marinate for 30 minutes.
Drain; reserve dressing.
In large skillet, cook onion in margarine till tender.
Add chicken and mushrooms.
Cook, covered over med heat till chicken is tender.
Add zucchini, tomatoes and marinade.
Cook and stir until zucchini is tender.
Remove from heat.
Sprinkle with cheese pieces.
Cover and let stand 2 minutes for cheese to melt.

1 (10 ounce) package fresh spinach, torn
3 small red potatoes, cooked and diced
2 hard-cooked eggs, chopped
1/2 cup sliced fresh mushrooms

1/4 cup chopped red onion
1/2 teaspoon cornstarch
1/4 cup apple juice
2 tablespoons cider vinegar
2 teaspoons granular no-calorie sucralose sweetener, e.g., Splenda ®

DIRECTIONS
In a salad bowl, combine spinach, potatoes, eggs and mushrooms. In a skillet, cook bacon until crisp. Remove bacon with a slotted spoon; drain on paper towels. In the drippings, saute onion until tender. Combine cornstarch, apple juice, vinegar, sweetener and pepper until smooth; stir into skillet. Twice Baked Potatoes
INGREDIENTS
1 large baking potatoes
1 tablespoon milk
salt to taste
1/2 teaspoon butter
1/4 cup and 1 tablespoon shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Clean and scrub baking potatoes. Pierce skin with a fork once or twice. Bake at 350 degrees F (175 degrees C) for approximately 1 hour or until the potatoes are soft and firm.
Let potatoes cool slightly. Cut baked potatoes in half and scoop out pulp within 1/4 inch of the shell edge. Mash the pulp with milk, salt and butter to taste. Stuff shells with mashed pulp mixture sprinkle tops with grated cheddar cheese. Place potatoes on a baking sheet and bake at 350 degrees F (175 degrees C) for 15 minutes or until cheese is melted and bubbly.
