Ok, so I was in the garage [when in my house, is the junk/old stuff room] and found half of a Big container of Quaker instant oats and was about to run to the kitchen and make some [we just ran out :/] until I saw the expiration date was about 18months ago..LOL! So I didn't cook it. I was wondering if I made some oatmeal& raisin cookies with expired oatmeal would it be like poison or would it not make a difference? Would you do it?..Do you think it can make someone sick?

Go for it. It should be fine.
Try this recipe:
1 cup oats
1 cup sugar
1 cup shredded coconut (or dessicated)
pinch of salt
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 tablespoon boiling water
3/4 stick butter

Mix the flour, sugar, oats, salt and coconut in a bowl. Melt the butter in the microwave. Mix the baking soda with the boiling water (just use a coffee cup) and tip into the melted butter. It will fizz up. Pour it into the dry mixture. Stir up. Add a little more flour if it looks too sticky. Roll into tablespoon shaped balls and put on greased tray. Bake for about 10 mins in your oven till the edges slightly brown. You can add raisins if you like. They are really buttery and yummy.

About a year and half old? I know I wouldn't do it - there's a reason for expiration dates

As long as there are no bugs hatched out in the oats it will be fine.
