CORONATION CHICKEN
5 or 6 chicken breasts - med. size
1 tbsp. olive oil
1 sm. onion, peeled and chopped
1 tbsp. curry powder (use this to taste)
1/2 c. chicken stock
1 rounded tsp. tomato puree
Juice of 1/2 lemon or tbsp. of lemon concentrate
2 rounded tbsp. of apricot jam or sweet chutney
1 c. mayonnaise
3 tbsp. light cream
Method:
Put chicken in a pan with a little water on bottom and roast in oven covered with tin foil until tender and cooked.
Sauce:
Heat oil, add onion, and fry until soft. Stir in curry and cook a few minutes only. Then stir in all ingredients, except cream and mayonnaise, and bring to a boil and simmer for 5 minutes. Thoroughly cool sauce and only then put in cream and mayonnaise and mix well together. I always double the sauce recipe because it is very good and the chicken should be well covered.
Skin and bone the chicken and slice into strips. If I am serving it the next day I put sauce and chicken in separate covered containers in the refrigerator overnight. I put the sauce over the chicken just before serving. Chill well before serving if you serve it cold. If you serve it hot, do not leave it in the oven longer than it takes to heat it, and heat it covered.
Serves about 10 to 12. Good cold with salads or hot with rice and chutney. Enjoy!

Chicken, Spinach, and Raspberry Salad
A favorite dish for the end of a busy day, this salad is summer comfort food for me. Cubed roast or poached chicken can be used in this recipe, but I always use grilled chicken. On a cool day I marinate dozens of boneless skinless chicken breasts in raspberry vinaigrette and then grill them while it is cool outside until they are cooked through. I then cool them slightly, slice them into thin strips and freeze them. Whenever I want cooked chicken with tons of flavor I just grab them from the freezer and thaw. Store-bought raspberry vinaigrette can be used in this recipe, or you can use my Wen's Raspberry Vinaigrette recipe.
3 cups cubed cooked chicken
1 pint washed raspberries
20 ounces washed and trimmed baby spinach leaves
1/3 cup sliced almonds
1 1/2 cups raspberry vinaigrette
Toss all of the ingredients together. Serve immediately.
Makes 6 servings.
Preparation Time: 5 minutes

Mediterranean Chicken Salad
INGREDIENTS
1 1/2 cups sun-dried tomato and oregano salad dressing
4 skinless, boneless chicken breast halves
2 red bell peppers, halved and seeded
1 head romaine lettuce - rinsed, dried, and torn into bite-size pieces
1 cup black olives, drained
4 ounces feta cheese, crumbled
1/2 cup sun-dried tomato and oregano salad dressing
DIRECTIONS
In a shallow dish, arrange chicken breasts and evenly cover with 1 cup of the salad dressing. Cover tightly and marinate in the refrigerator for 20 minutes to an hour.
Preheat your grill to high heat. While grill is preheating, arrange lettuce, olives and feta cheese in a salad bowl.
Remove chicken from marinade and place on grill. Cook chicken breasts for 6 to 8 minutes per side. Arrange peppers on grill, and baste with the reserved 1/2 cup dressing. (Don't use the leftover chicken marinade!) The peppers will need only a few minutes - be careful not to burn them!
Remove chicken and peppers from the grill and, when cool enough to handle, slice into strips. Arrange peppers and chicken on top of the salad and serve with the last 1/2 cup of dressing.

simple just take about 5 chicken thighs and legs or breasts if preferred season with old bay seasoning and a touch of garlic place in baking pan and cover with 2 cans of cream of mushroom/ celery whatever you prefer and bake at 375 for 1 hour basting from tome to time- add your fav veggie to your plate as a side and enjoy

chicken parmesan
i LOVE chicken cooked this way
this is how my mom cookes it
she takes chicken and then puts it in raw egg then in bread crums then puts it in a pan and cooks it
its really good and i dont think its that unhealthy
