It's hard to count, because different English translations use the word different times. Conventionally, "minister" is a translation of the Greek "diakonos" or "deacon."

EDIT: Okay- I must say here that I looked up the single word "minister" -which is what you asked for. Some have counted other "forms" of the word. And, or, other words that mean the same. Thats why there is a vast difference in the numbers.

"I preach (the good news)" appears 54 times in the New Testament.
gospel/good news appears 76 times
"priest" appears 31 times
"I proclaim (i.e. preach)" appears 61 times
"I bear witness" appears 76 times
They seem to have used "saint", "disciple", "apostle" or "slave" to describe their ministry position. Saint meant sanctified (i.e. set apart from the world), disciple essentially meant a student, an apostle was an admiral of the Greek navy so by calling themselves apostles they meant to say that they were the admirals of the church. And the word slave did mean slave, some people translate it as "servant" but the word itself was slave. And Paul is not the only one who uses this word, if I recall correctly Peter uses it abundantly too.
Hmmm two other words that seem to be used (notably in Acts) is a word meaning "to teach (in public, at the assembly, etc)" and sometimes the word prophet is used, because a prophet was one who speaks for God.

In the NIV version, minister/ministering/ministers appears 74 times.
The world "leader" appears in some form 204 times, but not all of those were church leaders.
