I have 2 large eggs, the cake mix box calls for 3.... is there anything i can do? thanks!

1 whole egg = 2 tbsp water + 1 tbsp oil + 2 tsp baking powder

1 egg = 2 tbsp water + 2 tsp baking powder

Does it ask for 3 eggs or 3 large eggs?
If its 3 eggs, then 2 large eggs should be Ok.

1/4 cup applesauce and 1/4 tsp baking powder. (Works best with muffins) If you dont use the 3rd egg your cake will be the consistancy of a brownie cake. Very dense so you need the baking powder to make it rise.

I seem to run out of eggs all the time when I am baking. I substitute about 1/4 cup of melted butter. Works great.

You can technically use 1 tsp. yeast dissolved in 1/4 cup warm water in place of one egg--but in general you don't want to deviate from baking instructions. It's definitely more of a perfect science than cooking is.

your cake may not rise as much but using 2 eggs will not alter the taste.

add a little mayonaisse. I've made cakes with JUST mayo. It will work. If you're making chocolate cake it will have a devil dog cake kind of taste.
