My inlaws have a dog who lunges at the door, barks and growls upon anyone leaving. My grandfather's dog barks as people leave and he used to even block them from leaving while chewing on a toy and growling. I'm not sure why these dogs do this but I do know that both of the dogs who I know that do it have a history of poor care. I'm not accusing you of that, but dogs develop abnormal behaviors for a reason. It can be stopped with behavior modification.

Sometime, its because they like the people and want them to stay. For instence, if the visitor was petting or paying attention to the dog, the dog may not want that person to leave. Sometimes, it could because they are not sure where they are going or what they are doing. They could feel threatend by this.

That's when the dog knows you are of guard. When your back is turned. A dog instinctively has the urge to hamstring his prey.
