Marinade chicken, breast or legs or thighs or whatever part of the chicken you like best, in Italian Dressing. Let it marinade for at least 6 hours - over night. Then you can do one of two things. If you have chicken breast, you can put the chicken in a pan with some olive oil and brown on the stove and add onions. You may want to sautee the onions separate, and then add them just when the chicken is ready. Serve with a salad or rice or your favorite vegetable.
Or you can put the chicken in a pan and cook it in the oven at 350 until it is done. Add your favorite sides and there you go a simple chicken dinner.

Celestial Chicken Salad a family fav. and great for summer.
A little prep but worth it. You can have it on cresents, breads or lettuce what ever. You can even use left over chicken. And feel free to adjust any of the amounts or omit what ever you like.

4 cups chopped, cooked chicken
1/4 -1/2 cup mayo
1/4-1/2 celery
1 T. finely chopped onion
salt and pepper to taste. Mix well (I usually do this a day ahead-but you don't have to)

1 can pineapple tidbits
1c. grapes cut in half if large
1-2 cans mandrin oranges(toss in last, they will mash easy)
handful of sliced almonds
1/2cup vanilla yogurt or sour cream
toss and then mix with chicken,
This is always a hit keeps for several days. I hope you like it as much as my family and friends.

Moroccan Chicken

This only takes about 10 minutes to prepare, and the bakes for an hour, so it's simple and easy.

4 boneless chicken breasts
2 tbsp veg. oil

1/2 cup chopped onion
1 garlic clove minced

2 cups salsa
1/2 cup water
1/4 cup currants (optional)
2 tbsp liquid honey
1 1/2 tsp cumin
1 tsp cinnamon

Preheat your oven to 325*F (160*C). Brown the chicken in the oil for a few minutes, then transfer to a baking dish.

Lightly saute onion and garlic in same pan you browned the chicken in. Spoon sauteed onion and garlic over the chicken.

Combine salsa, water, currants, honey, cumin and cinnamon (while chicken is browning) and pour over the chicken. Cover and bake for 1 hour.

Serves four people, and rice of couscous make great sides for this dish.

Here is a very easy version of Lemon Chicken:

Thoughly clean one whole chicken (preferably a roasting hen)
then take one large, ripe lemon and run it under very warm tap water to soften it.

Then roll it under your palm on the kitchen counter back and forth to gently break some of the membranes on the inside.

Next, poke holes in it with a meat fork. Now slide it into the rear cavity of the chicken.

Lightly oil the skin of the chicken and sprinkle with salt, pepper and paprika.

Place in oven at 325 degrees, uncovered for one hour or until the juices run clear.

Add a tossed salad, new potatoes with green beans and cut up melon for dessert and you can't beat it!!

Prep time for the entire meal is only about 25 minutes. Meal is ready in about 1 1/4 hours!!

We like Apricot Chicken at our house.
Take 1kg chicken pieces and toss in seasoned flour. Brown well and place in an oven proof dish. Mix the contents of a packet of French onion soup and a can of apricot nectar (juice) and heat in a small sauspan until thick. Pour this over the chicken and bake at moderate heat for 1 hour. Serve with rice and peas. So easy and yummy.

can't get any easier than this... A whole cleaned chicken seasoned and stick of butter in cavity. Use a roasting pan just like you were making pot roast and veggis. I use chicken instead with chicken base & water in the bottom of pan to steam while cooking. Add potatoes, quarted onions and carrotts while cooking chicken. Add your favorite fresh veggies an 3/4 hour later. I will use brocoli, asparagus and mini corn on the cobs!(what ever you like) The secret is to season well and to keep basted chicken and veggies with real butter ever so often. Use only an inch or so of chicken base and water, just enough to keep all moist while you cook COVERED. Plenty of butter, salt and pepper with parsley flakes on chicken for garnish. I serve on a platter with veggies around the chicken and some grapes for color.One of my family's favorite.

Chinese Chicken with Spring Onion, Ginger and Cashew nuts

Ingredients:

* 4 Chicken breasts, skinless and cut into bite-size chunks
* 100 g Cashew nuts, unsalted
* 2 tbsp Peanut/ Vegetable oil
* 1 Egg White
* 2 tbsp corn Flour
* 1 clove Garlic, finely chopped
* 3 Spring Onions, chopped
* 2 tbsp Ginger, chopped
* 2 tbsp Soy sauce
* 2 tbsp dry Sherry
* 1 tsp caster Sugar
* 1/2 tsp Chilli sauce
* 1/2 tsp Salt

Method:

* Mix corn flour, egg white and salt in a bowl, add chicken, mix well and refrigerate for 10 minutes.
* Meanwhile, stir-fry cashew nuts in a wok in the 1 tbsp of oil until golden. Remove the nuts and remove any excess oil from the wok with a kitchen paper.
* Heat the remaining oil in the wok and cook chicken, garlic and ginger in hot oil for 3 minutes, then add soy, chilli, sherry, sugar and 2 tbsp of water. Cook until sauce is thick.
* Return cashew nuts to the wok and mix well with other ingredients.
* Serve the chicken topped with spring onions and boiled rice.

Wow! so many choices!!

We eat chicken a lot at my house. Try cooking it up with rice and adding some salsa and corn. (a little chili powder adds a nice flavor).

or.. if you like salad, saute some chicken breasts with garlic and serve on top of a bed of greens.
or a really easy way to cook it is bake it in oven... here you have endless possiblilities, my family like to cover it in salsa or spaghetti sauce before putting it in the oven.

Many times we just cook up chicken breasts with various spices and seasonings (like oinions, garlic, cumin, nutmeg, cajon powder, etc) and serve it with baked potatoes.. or mix it with gravy and serve over mashed potatos and/ or toast

The BEST way to cook chicken is slather it with a mixture of mustard and pickle juice (equal proportions) and then grill on the grill or BBQ. (DELICIOUS)

Also, if you like variety, chicken spaghetti is good, or chicken tacos/burritoes. I also enjoy chicken burgers and grilled chicken with mozzarella cheese melted on top!!

The good thing about chicken, is that it tastes good with almost any vegitable you have on hand and you can always use a little creativity to get your fiber in (bread/grain/etc)

Use your imagination, thats the fun part about cooking. Sometimes I start with a fry pan and some chicken and wing it. That usually turns out the best!! cause anything can happen.

There's one rule. If it tastes good then you're succeeding.

There a endless possibilities... lol I always like if it is a nice day out GRILLING' (grill up some chicken w/ a Lawry salt.) Simple and delicious. For a side have fresh fruit and spicy potatoes (Lawry salt , pepper, and butter, fried potatoes!) Fry them on an oven top, and then spice them (cut little bites) YUMMY! :) Enjoy.

I'd slice the chicken and make a stir-fry with whatever vegetables you have on hand. Season with some garlic and chillies or chilli paste/tabasco for a little kick.
