CHICKEN AND RICE CASSEROLE

1 whole chicken, cut up
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 can of cream of celery soup
1 cup of rice
1/2 stick of butter, diced

Preheat oven to 350F.
Combine the rice, butter and three soups in a large bowl. Put them in a large casserole dish or a 9X13 pan. Put the chicken on top. Spice with salt and pepper as desired.

Bake 35-40 minutes.

Zesty Italian Chicken and Rice


Ingredients
4 boneless, skinless chicken breasts
3/4 cup Italian dressing
1 1/2 tsp. Dried Tomato & Garlic Pesto Mix
1 cup uncooked Minute® rice
16 oz. bag frozen broccoli and carrots

Directions
Place chicken in greased 9 x 13 baking pan. Pour salad dressing over chicken; sprinkle with Dried Tomato & Garlic Pesto Mix. Cover; bake at 375° for 30 minutes. Add rice and vegetables under and around chicken. Cook covered an additional 15 minutes. Makes 4-6 servings.

I have a good and easy chicken and rice recipe -

boil the chicken and then cut into pieces - bite size
make your rice
saute' in butter sliced onion, bell pepper, and mushroom, pimento - you can leave any of these out if you want.
then when it is done, add a big can of cream of mushroom, or chicken soup, stir - add a little milk to make it creamy - cut up Velveeta and put it on top and stir until melted - you can also use shredded cheese - ( I use chicken bouillon seasoning and other chicken seasonings too, but you can just salt and pepper if you want - it is versatile )
In big bowl put rice and chicken, then cover with sauce - mix well, pour into a baking dish and bake uncovered for about 30 min. on 350. Cover with cheese and return to oven until melted - YUMMY!

CHICKEN TORTILLA CASSEROLE 3 cups cubed chicken 3/4 cup chicken broth 3 tbsp flour 1/4 cup butter 2 1/2 tbsp onions (chopped) 1 1/2 cup milk 1 1/2 oz jalepeno peppers 1 tsp salt 1 doz. tortillas, pulled into pieces, or taco chips 1/2 cup shredded cheese (preferably sharp) 1 1/2 cup chopped stewed/canned tomatoes Melt butter, add onions and saute about 5 minutes. Add flour and cook till bubbly. Pour milk and broth in gradually, stirring until smooth. Add peppers and tomatoes and stir. In a large casserole spread a layer of meat, then tortillas or tacos and cheese, repeat until all is used up. Pour sauce over this and sprinkle with cheese over entire casserole. Bake at 350F degrees for 1/2 an hour our until bubbly. Serve hot.

Chinese Chicken with Spring Onion, Ginger and Cashew nuts

Ingredients:

* 4 Chicken breasts, skinless and cut into bite-size chunks
* 100 g Cashew nuts, unsalted
* 2 tbsp Peanut/ Vegetable oil
* 1 Egg White
* 2 tbsp corn Flour
* 1 clove Garlic, finely chopped
* 3 Spring Onions, chopped
* 2 tbsp Ginger, chopped
* 2 tbsp Soy sauce
* 2 tbsp dry Sherry
* 1 tsp caster Sugar
* 1/2 tsp Chilli sauce
* 1/2 tsp Salt

Method:

* Mix corn flour, egg white and salt in a bowl, add chicken, mix well and refrigerate for 10 minutes.
* Meanwhile, stir-fry cashew nuts in a wok in the 1 tbsp of oil until golden. Remove the nuts and remove any excess oil from the wok with a kitchen paper.
* Heat the remaining oil in the wok and cook chicken, garlic and ginger in hot oil for 3 minutes, then add soy, chilli, sherry, sugar and 2 tbsp of water. Cook until sauce is thick.
* Return cashew nuts to the wok and mix well with other ingredients.
* Serve the chicken topped with spring onions and boiled rice.

You can marinate any chicken part, (breast, thighs etc..) in Newman's Olive Oil & Vinegar for at least 6 hours -over night. Then just cook the chicken as you normally would and add a side dish. This is the best chicken meal I have ever made, everyone I make it for LOVES it.

in a skillet, brown pieces of chicken in olive oil and chopped garlic....while waiting on chicken to brown, place bell pepper rings on bottom of baking pan, sprinkle one (1) cup of uncooked rice over the pepper......remove browned chicken from skillet....in skillet (with oil in it) in which chicken was browned, add 2 cups of water and one package of onion soup mix........when well mixed, pour over chicken....cover and bake 350' oven for about 1 hour or until chicken pieces are done. Can also do pork chops this way....yum
