The tomatoes used to make ketchup are rotten anyway, so if you're worried about spoilage it's already too late. Refrigeration doesn't add shelf life to ketchup, only makes it colder.

Restaurants use a lot of ketchup, so the chance of it going stale or bad isn't a problem. If you go through a bottle of ketchup in a week or two, it shouldn't hurt to leave it a room temperature. It will most likely smell 'stale' or taste bad before it grows mold. The PH (acidity level) of tomato products is high, so it is harder for bacteria to grow. To be safe, keep it in the fridge if your not going to use it often.

Restaurants go through so much of it it really doesn't have time to go bad.

You should, because it keeps it fresh. But since restaurants ketchup go by so fast (cuz so many people use it,) they dont have to. Its also fine if it stays out

you don't have to, but i do. most restaurants go through it much faster than i do at home. i think there's a greater chance of bacterial growth at room temperature. and since i don't go through a full bottle in a day or two, i prefer to refridgerate it.

You should refrigerate your ketchup at home. They don't at restaurants because they go through it quick enough that it's not necessary.

On the bottle of heinz ketchup in the fridge it says refrigerate for best results, so i assume its fine if you dont refrigerate it.

restaurants go through ketchup faster than you would at home...unless you eat _alot_ of it :) so its not necessary to put it up
refridgeration is best for keeping your ketchup better longer :)
