Hi all,
I loaded up on Ragu pasta sauce when it was on sale... I mean loaded up; I bought 50 jars. Basically I think it tastes great, is low calories, no fat, lots of vegetables and low in carbs...

I love pasta! But I've decided the spikes the starches cause in my insulin level are probably detrimental to my health.

So what can I eat with all this pasta sauce that is low in GI and doesn't cost an arm and a leg? Is there anything?

Whole wheat pasta or another pasta thats called kelmut which is an ancient whole grain. Also I love baking chicken in pasta sauce with mushrooms on top, it keeps chicken really tender and its sooo good!

Could you try something like veal parmesan? If you don't like veal, you might experiment with other types of meat, like cubed steak. Also, my mother used to put tomato sauce on roast--you might try that to create an Italian version. Finally, try meatloaf. My husband makes a great meatloaf with 2 lbs. of ground chuck, about 1/2" pieces of bread, 1 onion, salt and pepper to taste, a little Worchester sauce, and enough ketchup to make it all hold together. You might try replacing the ketchup with Ragu to create an Italian meatloaf.

look into spaghetti squash, yes there is such a squash, once cooked it will scrape out of the husk just like spaghetti noodles and it adds great flavor.
