I’m Irish and living in Japan. I ended up getting married Northern Ireland because the bureaucracy is ridiculous in the Republic. Here are few things to beware of if you intend on going through with marriage in the Republic.

Registration: You have to present all the relevant documentation (visas, etc) one month in advance in person.
Church wedding: You have to get letters from your bishop to the bishop of wherever you intend of getting married, and get responses etc. You also have to do a marriage course.
You would also have to swear an oath to rear your children in Catholicism.
(There are no “wedding chapels” in Ireland)

I got married in Co. Down in a lovely guesthouse in the middle of nowhere that we booked out for three days and partied till we dropped! It’s also a hell of a lot cheaper!

I would talk with a travel agent or a company that deals with trips to Ireland (you'll probably need one anyway what with guests traveling over seas as well to be there). They may be best able to let you know who you can contact there. I would also check with your city/county/state about making sure that it is a legally sanctified wedding. It would suck to go to sooo much effort and money and time and afterward get home and discover that becuase you didn't dot this 'i' or cross this 't' your not legally married.

Go to your local bookstore like Borders and Barnes and Noble and they have tons of books. I went to Ireland last summer and stayed in the small town of Cork which was really beautiful. It would be a great place to get married. There is also this really pretty church called St. Finbarre's Cathedral. You should check it out!

Go to your local travel agent. Technically you want a destination wedding and sometimes they can guide you through the process. Also, look at the websites below:
