The name for those group of people are call RAWFOODER, or RAWFOODIST not Japanese. Not all Japanese food are raw. Raw Food are use as a form of diet method. A raw food diet consists of uncooked and unprocessed nor treated with chemicals so it retains the enzymes and nutrients of its natural state, often organic foods.
In a nutshell, raw foodists eat: fresh, raw fruits and vegetables as well as seeds, nuts and some soaked or sprouted grains. There are unlimited recipes and dishes which are made from these ingredients, including: pates, loafs, "noodles", cakes, cookies, crackers, soups, salads and marinades. Raw Foodists do not have to eat only salads!
Some raw foodists in a transition period will choose to eat things like mahi tuna or steak tartar, but after awhile they usually stop. It isn’t necessary, you won’t gain any thing by eating it. Raw meat is still hard for the body to process, so it can't assimilate the nutrients in meat as well as from vegetables, fruits and soaked nuts and sprouted seeds. Many raw foodists are also against eating meat for humane and ecological reasons.
Overview There is no universal consensus over what exactly constitutes a raw food diet. Historically the term was primarily used to describe a raw vegan diet consisting fully of raw fruits and raw.

Herbivore comes to mind, but that refers to animals other than human, I have seen it a statement claiming the human alternative is vegetarian, but Humans cook food generally, though that does reduce its nutritional value.
Here is a website about raw food eaters, as they call themselves raw food eaters, there probably isn't another word for it, but if anyone knows of a specific name, some here will.

The fruitarian diet includes other raw foods, but about 75% is raw fruit.

There are whole tribes of different 'flavours' of raw-foodists, but maybe you're casting about for 'anapsologists', those who select their choice of raw foods solely on the basis of instinct. (They're sometimes also referred to as 'Instinktos'.)
