Ideally, you should contact them and ask them.
We might surmise that:
1. They are not religious Jews
2. They realize the covenant only applied when one was in Israel
3. They realize that the sabbath only works from one location on the globe. For instance, one traveling east from Israel to New York would be keeping their seventh day on what is Friday in New York instead of Saturday.

Jews are forbidden to work on Saturdays, but some choose not to obey Torah law.
Orthodox Jews abide by Biblical (Torah) law, but conservative and reform Jews do not. In fact, Orthodox Jews are a minority among Jews.

Jewish people celebrate the Sabbath on Friday. So they will either have not worked Friday or taken a short day and may come in on Saturday to catch up.
Of course if you ask them, they'll quote Jesus "Is man for the Sabbath or is the Sabbath for man?"

Not all Jews strictly observe their religion.
It is like asking why do some Muslims drink alcohol or some Christians do not go to Church.
