Ground Beef Gyros
Ingredients:
1 (8 ounce) container plain yogurt
1/3 cup chopped seeded cucumbers
2 tablespoons finely chopped onions
1 clove garlic, minced
1 teaspoon sugar
Filling
1 lb lean ground beef or ground turkey
1 1/2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt, optional
3/4 teaspoon pepper
4 pita breads
3 cups shredded lettuce
1 large tomato, chopped
1 small onion, chopped
Steps:
1. In a bowl, combine first 5 ingredients.
2. Cover and refrigerate.
3. In separate bowl, combine ground beef and seasonings.
4. Mix well.
5. Shape into 4 patties.
6. Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.
7. Cut patties into thin slices.
8. Stuff into pitas.
9. Add lettuce, tomato, and onion.
10. Serve with yogurt sauce.

Fiesta Salisbury Steaks
Ingredients
2 - 3 tsp. Fiesta Party Dip Mixâ¢, dry
1/2 tsp. Seasoned Salt
1 1/2 lbs. lean ground beef
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
4 oz. can chopped green chiles
2 Tbsp. minced green onions
Corn, Black Bean Salsa
Directions
Combine first 7 ingredients; shape into 5-6 oval patties. Grill patties over medium heat until cooked to desired doneness. Serve topped with Corn, Black Bean Salsa. Makes 5-6 servings.

Macaroni and Cheese with Ground Beef, Salsa and Green Chiles
INGREDIENTS
1 recipe Creamy Macaroni and Cheese
1 pound lean ground beef
1/8 teaspoon Salt and black pepper to taste
1 tablespoon chili powder
1 cup salsa (your choice of hotness)
1 (4.5 ounce) can chopped green chilies
1/4 cup minced fresh cilantro
DIRECTIONS
Follow basic recipe for Creamy Macaroni and Cheese, but use pepper Jack cheese, not cheddar.
Heat a 10-inch skillet over medium-high heat. Cook ground beef, seasoning lightly with salt and pepper, until most of the liquid evaporates, about 5 minutes. Stir in chili powder, salsa and chilies; simmer, 2 to 3 minutes. Add cilantro, then stir mixture into macaroni. Serve hot.

Enchilada pie (This is something I made up but my family really likes it)
Brown ground beef, onion, garlic, pack of taco seasoning 1/2 cup water, 1 can mild enchilada sauce simmer on low till liquid is absorbed.
In a baking dish, spray with nonstick spray, layer the bottom of the pan with corn tortillas, overlapping. Add a layer of the meat sauce, a layer of shredded monetary jack cheese, pour (from the can) mild enchilada sauce over the layer.
Continue layering, ending up with a layer of corn tortilla on the top. cover the top enchilada sauce and shredded cheese. Cover with aluminum foil and bake at 350 in oven for about 30 minutes or until hot through out and cheese is melted.
Serve (like lasagna)
with re-fried beans and rice (when cooking white rice add some of the enchilada sauce in place of some of the water about 1/3 can).

Sugar Pie's Deep Dish Taco Squares
2 cups biscuit mix
½ cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1½ pounds ground beef
½ green or red bell pepper – finely chopped**
2 Tbsp. chopped onion**
1 pkg taco seasoning mix (¼ cup)
1 (8-oz) can tomato sauce
½ cup mild salsa
2 cups shredded cheddar cheese
Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.
Combine sour cream and Ranch dressing. Spread over baked crust and set aside.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling.
Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.
** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.

1 lb ground beef, browned
1 medium onion, browned with ground beef
1 medium head of cabbage, shredded, not cooked
1 (1 lb.) loaf of frozen bread dough, or hot roll dough, thawed but not raised
--combine beef, onion and cabbage.
--If using bread dough, tear off a chunk and make 1" ball--flatten to about the size of a small hamburger bun. Place 1/4 cup beef mixture on top, and cover with another flattened dough ball. Seal edges with a fork.
--place on lightly greased cookie sheet. Continue process until ingredients gone.
--Bake according to bread package directions, until tops are golden brown. Remove from oven and brush tops with butter.

Taco Soup
1-1½ lbs. lean ground beef
1 onion, chopped
1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can whole kernel corn, undrained (I like the mix of white and yellow corn)
2 cans diced tomatoes, any variety, undrained (I like petite diced, w/ onions and bellpeppers in them; if you want heat, use at least one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning
Garnishes (any or all):
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese
Brown ground beef over medium heat in large stock pot. When nearly cooked, add onions and sauté w/ ground beef. When onions are wilted but still opaque, stop cooking and drain off any fat. Return to heat and add remaining indredients. Cover and let simmer at least 30 minutes, or up to about 3 hours. (Can be held longer in a slow cooker set on Low.)
Serve in bowls w/ crushed corn chips in the bottom. Top each bowl w/ garnish of choice.

Smush it into patties and I call it hamburgers. Put some cheese on them and put it on a bun. It is very tasty.
