i put sour cream in my freezer thinking it was icecream and woke up today to use my sour cream only to find out it was frozen is it still safe to use it after it is thawed ? I have had frozen milk an used it and also cheese does it fall in the same catagory or no.

it tasted good not fluffy like it should have been but still was ok to put in mashed potatoes

I have been told that it's okay to freeze anything and then use it afterwards. All freezing does is stop the bacteria from growing because the bacteria is what makes things go bad.

On the other hand, several of my cookbooks say not to freeze sour cream because it doesn't do right when it thaws. Apparantly it seperates or something. I just went and read every cookbook I have that says that, but none of them really explain why very well. What I got out of it is that the properties of it don't do well when frozen, so when it thaws it doesn't have the same consistency.

I would say thaw it out, stir it really good, and take a small bite. If it doesn't taste right, toss it. If it tastes right, use it. It can't possibly have gone bad if you froze it while it was still fresh (the bacteria thing), so you won't get sick from it.

Just an FYI, all my cookbooks say that you can freeze any dairy product like milk and cheese, and that sour cream is the only one that you shouldn't freeze.

Actually, I freeze almost everything but never did sour cream.... but only because i'm afraid when thawing the properties might be broken down and it might not taste as good, nor have the same consistancy, not afraid for health reasons. I've fozen temptee whip cream cheese and it does become a little 'crumbly' [though not really THAT bad, just not as creamy anymore, I think] and a little different but sometimes I have to anyway, when not using it up fast enough, and I ALWAYS freeze hard cheeses which are fine and can't even LIST all the things I freeze, but know what? I'm going to freeze a small portion of sour cream [because sometimes it stays too long in fridge and goes bad] and see what happens, has it defrosted yet? Have you tasted it yet? How's the consistancy? I eat it so seldom that I would like to preserve at least half the container by freezing [my experiment will be a much less amount though]. Can Sour Cream Be Frozen

The refrigerator froze my sour cream a couple days ago. The texture was so terrible there was no hope of thawing. I had to toss it.

However, freeze cheese! I have about 7 different bags of cheese I shredded in the freezer right now. It's cheese on demand with no mold!

It's not at all harmful to use after it has been frozen. The problem is that the texture may not be what you expect. It'll have separated in the freezing process, so even if you mix it up real well it'll probably be pretty runny. Quite safe to eat, though.
