okay i have all of that salsa, cheese, mex cheese, tomatoes, letuce, flour, and corn shells, but we are not doign rice or beans because this is finger food , and i thought about chips and salsa too but i am askign what about people who dont like taco or mexican all together what else could i sever to make sure they are happy too?

I attended a wedding last weekend that had a taco bar, potato bar and small hmbg. hotdogs and fries bar. Something for everyone.

Make sure you have hard shells and soft shells. Also options of chicken, beef or beans as the base (vegetarian re-fried beans) and TONS of veggie and cheese options! Get a few great homemade salsas (in a variety or hotness degrees, mild medium and hot) and some tortilla chips. Fruit sounds like a great addition.
Sounds like it will be really fun!

Add grilled chicken cubes. It can be used on the tacos or eaten separately. You could have different types of lettuce available like cabbage, etc for anyone who's a vegetarian.
When I was in high school I worked as a hostess in a Tex-mex restaurant. We served sopapillas with honeybutter like some restaurants serve roles before a meal. It was probably the most popular thing we served. All you need is a frier and dough. They cook in like 1 minute but have to remain under a heat lamp. Don't put cinamon or sugar on them. They're excellent with just honeybutter.

Another cute idea I saw at a wedding show was a nacho cheese fountain (like a chocolate fountain, but with nacho cheese flowing) they included pretzels, chips, bread, veggies, and things like that to dip in the fountain. Veggies, chips, and dips are good for vegitarians, or they can make tacos without the meat. Churrizos (long fried dough sticks rolled in cinnamon and sugar) are great, and could be used along with a chocolate fountain. A margarita machine, or sangria wine, or mexican hot chocolate would be great to drink!

I would serve an avacado salad with tortilla chips,little vegetable quesadillas with salsa, even enchiladas would be nice. You could set them up as a bar too. I liked the margarita bar idea!

Never forget the Guacamole at a taco bar-this makes the meal.
Oh, and one of the best hot sauces is Frank´s Red Hot Original sauce-I live in Germany, and have to take it home in my suitcase every time I visit the States.

Definitely some sweet cornbread!
You could also provide tortilla chips and queso blanco and give them the option of making nachos with the same toppings.
Black beans and either white or yellow rice.

i'm trying to think of things that haven't been suggested yet (the other ideas are great and your taco bar idea is so creative! your guests are going to love it!)
chips and queso
lay out tortillas and whatever else to upgrade it to a "make your own taco and burritos bar"
maybe some sort of soup? tortilla soup is easy to make and very tasty!

I would have cheese and crackers as well for those who do not like taco's. I've never seen anything like that before - Way to be creative!!!
