Mary Short’s Spaghetti Pie
350° oven for 30 minutes
13” x 9” x 2” lightly greased pan
1 pound lean ground beef
1 - 15 ounce jar of thick spaghetti sauce
8 ounces of spaghetti noodles
1 cup of cottage cheese
1 cup of mozzarella cheese
1/3 cup of Parmesan cheese, grated
1 chopped onion
1 beaten egg
2 tablespoons of butter or margarine
Cook the beef and onion together, breaking it up while cooking. When it is no longer pink, drain the fat out of it. Stir in the spaghetti sauce into the meat and set it aside.
Break the noodles into thirds and cook according to the package directions. After cooking, drain them. Immediately stir in the butter, egg and Parmesan cheese. Make sure to mix it well.
Spread the noodles evenly in the pan and then layer them with the cottage cheese. Gently spread the meat on top of the cottage cheese. Bake for 25 minutes.
Remove from the oven and add the mozzarella layer. Return to the oven for 5 minutes or until the mozzarella melts.
Remove from the oven and let it cool for 5 - 10 minutes before cutting it into individual portions.

Why not boil a few pototes, peel them and slice them round - quater inch wheels. Slice some tomatoes same way. Place in a plate one after the other and drizzle with some olive oil - open a can or sardines, cut up a red onion and place in the middle of this circle.... and you've got a simple dinner. Open a bottle of white wine and you'll doll up the table.

Chicken Fajita Wraps
This is a delicious dinner. Buy some tortillia's - the large ones. I like the spinach and regular flour ones. I buy a 3 pack of boneless, skinless chicken breast, a green bell pepper and a red or yellow bell pepper (the colors add a nice touch). Drizzle your non stick skillet with olive oil and add about 1 tablespoon of butter, when heated up, add chicken (I usually slice the breast in strips). Brown the chicken and then add the bell peppers and a large onion sliced. Let vegetables wilt and make sure chicken is cooked through. Heat your tortillia's and add your chicken to your heated tortillia. I then have these toppings available to add as you like - grated cheese, sour cream, guacamole, diced tomatoes, shredded lettuce, picante sauce and any other ingredients you like. Wrap it up tightly to allow your cheese to melt from the heat of the chicken and cooked vegetables. I love these and it is so filling!!

Fast Easy Delicious Pizza
1 Loaf Italian Bread
1/2 cup pasta sauce
2 cups shredded mozzarella cheese(or cheddar)
24 slices pepperoni
any other toppings of your choice...
mushrooms, green peppers, tomatoes, pineapple, diced ham...
Heat oven to 400F. Slice italian bread lengthwise, then cut crosswise, into 4 sections, each about 4 inches long.
Spread each piece of bread with pizza sauce, dividing equally. Then top with 1/4 cup cheese and 3 slices of pepperoni and whatever other topping of your choice.
Bake for 12min or until cheese is melted and lightly browned. Serve Immediately~
toss up a small green salad (lettuce, tomatoe, celery, green onion and cubed cheese pieces)
Fast -simple -delicious and filling*

We all have this problem sometime"what' to make tonight"?
Is it hot out? BBQ! Better yet don't worry about it, ORDER IN!
Plan tomorrows dinner today, and you won't be asking yourself the same question tomorrow.
I plan what to have for suppers for the week on shopping day and I try to cook in the mornings {the meats anyway} it works out good for me, leaves that suppertime rush alittle more relaxed and my house doesn't get heated up for whole day.
Good Luck and enjoy whatever it is you'll have. I'd like to know what you decided on.

Chicken Enchilada Skillet
• 1 tablespoon oil
• 1 lb. boneless skinless chicken breasts, cut bite-sized
• 1 14.5 oz. can chicken broth
• 1/4 cup ranch dressing
• 2 tablespoons flour
• 6 flour tortillas, cut into small pieces
• 1 cup shredded four cheese
• 1/2 cup salsa
• Heat oil in large deep skillet on medium-high heat. Add chicken; cook 7 minutes or until cooked through; stirring occasionally.
• Mix broth, dressing and flour until well blended; gradually add to chicken, stirring constantly. Bring to boil. Reduce heat to medium-low; simmer 3 minutes. Add tortillas; stir to combine.
• Sprinkle with cheese; cover. Simmer 3 to 5 minutes or until cheese is melted. Top with salsa.
